
I’m going to be on television!!
The Dallas ABC affiliate news team is filming a story on me, for the 5 o’clock news! It’s pretty much the coolest thing to happen to me since… ever?!
For the feature, I’m thinking of either making the Deep Dish Cookie Pie or the Black Bean Brownies.
Right now I’m more excited than nervous, but that’s maybe just because it hasn’t really sunk in yet how many people are going to see this! Today’s agenda: figuring out what to wear, setting up dishes, and going on a cleaning spree. To power me through, I made a stand-by favorite breakfast:

This isn’t your average bowl of peanut butter oats. The cooking method makes this breakfast taste like you are eating a giant bowl of gooey peanut butter pudding. It’s life-changing… at least as far as breakfast is concerned!
Peanut Butter Breakfast Pudding
Ingredients
- 1/2 cup rolled oats
- 1 cup milk of choice
- 1/4 tsp salt
- 1/2 a ripe banana
- 1-2Â tbsp peanut butter OR allergy-friendly alternative
- 1/4 tsp pure vanilla extract
- sweetener of choice, to taste
- optional: chocolate chips
Instructions
Cook the oats, salt, and milk (either on the stove or in the microwave). Meanwhile, blend the pb and banana. Then add your vanilla, sweetener, and 1/2 of the cooked oats to the blender (I used a Magic Bullet) and re-blend. Stir in the rest of the oats. You can blend all the oats if you prefer, but I like the chewiness of leaving some un-blended.

Are you comfortable speaking in front of a group?
Or do you dread giving public presentations? Have you ever acted in a play or been on tv? I always loved giving class presentations and speeches in school, so I probably would’ve enjoyed acting. Unfortunately, I was too busy with soccer and tennis to join the drama club. As for the upcoming tv story, I am nervous about one thing (which might sound silly and superficial): what to wear. I’m clueless about fashion. Any tips?? Please send them my way!

Congratulations. Totally agree with Annie about wanting to see a video and the cookie pie will be perfect – innovative but not too scary to non-vegans or healthy food first timers!
Def go with plain, crisp coloured clothes and extra face powder (studio lights are really hot).
Good luck! As to what to wear… be sure to avoid small, busy patterns on your shirt. They tend to look bad on TV.
Wow how exciting, I am so happy for you!!!!! I hope you will post the video on your site for those of us who don’t live in your area. The deep dish cookie pie is wonderful, great choice! I eat a similar oatmeal to the peanut butter pudding you posted very often. I was inspired to make it based on your melted banana trick. I make steel cut oatmeal, since I’m not a huge fan of creamy like you are, then I use your melted banana trick and add it as well as a dollop of almond butter in the oatmeal once it has finished cooking. I just stir it together. Too lazy to get out the blender, but it is great. I like the idea of the vanilla extract I will have to add that in as well. I recently added 1/2 tspn of cinnamon which was a nice addition as well. I don’t use any sweetener, the melted banana is sweet enough. You’re going to be SO fab! The cookie pie is a great choice, I haven’t made it though so I don’t know how quick and easy it is to make but I know everyone loves it! I know your chocolate fudge pie would be super easy to make and impressive, and your cookie dough dip would probably go over a treat too!
Don’t worry about public speaking – just be yourself and pretend it’s just you and the interviewer there. And if you can get it on YouTube so we can all watch! 🙂 x

Congratulations! That is so exciting. 🙂 This sounds like a great recipe to use. I’d go with what other people said about what to wear: solid colors. Partly, that way people can see what you are doing with your hands- an old secret of sign language interpreters. And I would add- wear something comfortable that makes you feel confident and happy. 🙂
