Not for sharing.
Normally, I am very good about sharing my desserts with any friends who show up at my door. (And due to the fact that my friends know I make desserts for a living, inevitably someone will always show up at my door.) But as soon as I made these cookies, I knew I had something special on my hands. Therefore, I barred the door shut.
And contemplated building a moat around my house.

Peanut Butter Cookie Dough Cookies
Peanut Butter Cookie Dough Cookies
Ingredients
- 1/4 cup peanut butter
- 1/4 cup plus 3 tbsp raisins
- salt to taste (I used a little over 1/4 tsp, but I like salty pb cookies!)
- 2 tbsp roasted, unsalted peanuts (If you can only find salted, reduce or omit added salt)
- 1/8 tsp pure vanilla extract
Instructions
Throw everything into your food processor (I used an Osterizer) and combine until very smooth. Roll into balls, cookies, bars, or simply eat shovel the dough into your mouth, straight from the machine. Dough can be stored on the counter, in the fridge, or in the freezer.
Or in your belly.

Peanut butter is my latest addiction. I WILL be trying these! I love how I can eat vegan cookie dough without being scared of food poisoning and salmonella!
If you don’t use any animal products I believe you are safe. The trick is substituting for
the eggs. Flaxseeds boiled for 20 minutes yield a substitute that I have found for a
great replacement for the eggs. 2 quarts water with 4 T of flaxseeds. Very messy and
goey but works wonderfully as a replacement. However, I am not a medical authority
and if you want some definitive answer you should check with your health care professional.

Quick question….SO I tried to make you pizzart but I used regular whole wheat flour instead of pastry flour and I think it really messed it up!
I have a suggestion….You should do a Chocolate Covered Katie “Pantry Staples”. Things at the grocery store you need to whip up a lot of your recipes. Most of the time I dont have the things on your recipe list and I get all disappointed 🙁 SO I think it would be a great idea if you just made a list of the MAIN things your readers need to make your recipes, then we can all go shopping and make your yummys whenever we want!!

I think this being raisins are much easier on my college budget! Haha. Sad truth.
at my local grocery store, you can get medjool dates for a whopping $12.89 per pound! they are so freakin’ expensive it isn’t even funny. Therfore i usually use pure maple syrup, honey, raisins, or (GASP!) real sugar. or i find another recipe. that’s why i love my Katie because she usually doesn’t use dates.

This is a great recipe! I love super simple. I ended up subbing strawberries for raisins and pecans for peanuts. Turned out pretty good! I only have one question. Can I sub almond butter for peanut butter in this recipe?
