Normally, I am very good about sharing my desserts with any friends who show up at my door. (And due to the fact that my friends know I make desserts for a living, inevitably someone will always show up at my door.) But as soon as I made these cookies, I knew I had something special on my hands. Therefore, I barred the door shut.
And contemplated building a moat around my house.

Peanut Butter Cookie Dough Cookies
Peanut Butter Cookie Dough Cookies
Ingredients
- 1/4 cup peanut butter
- 1/4 cup plus 3 tbsp raisins
- salt to taste (I used a little over 1/4 tsp, but I like salty pb cookies!)
- 2 tbsp roasted, unsalted peanuts (If you can only find salted, reduce or omit added salt)
- 1/8 tsp pure vanilla extract
Instructions
Throw everything into your food processor (I used an Osterizer) and combine until very smooth. Roll into balls, cookies, bars, or simply eat shovel the dough into your mouth, straight from the machine. Dough can be stored on the counter, in the fridge, or in the freezer.
Or in your belly.

So easy to make! I never made Larabars because I thought you needed dates, but raisins make a great substitute. These PB ones sound great. I am SOOO making these tomorrow and packing them in baggies for snacking on the go!

I was a doubter all the way until I put it in my mouth at the end. Wow! Soooo wonderfully indulgent. I used dates since it’s all I had on hand. You were right–I just scooped (nearly) all of it into a bowl and ate it right away.

I totally wanted to make this recipe since I ALWAYS have PB, raisins and vanilla extract on hand. EXCEPT TODAY I was all out of extract so I subbed maple syrup. AND I was short on raisins 🙁 … I used golden raisins and dried BLUEBERRIES instead and it tastes AMAZING!!! I love how your recipes are an easy benchmark for my crazy brain that never leaves “good enough” alone.

I keep my cupboard stocked with these ingredients now! SO delicious! Also, the difference in using regular peanut butter and natural makes a world of difference!

I just made these today (with raisins that were past their prime). The cookies were STILL delicious. I rolled the cookies in shredded, unsweetened coconut. Fantastic treat. Thank you for the recipe! You may have broken my expensive addiction to Larabars 🙂
Found your recipe on Pinterest and just had to try these. Absolutely loved it but had no peanuts so replaced them with chopped hazelnuts and they turned out super delicious. I used a small ice cream scooper to shape them evenly and got 12 little cookies. Thanks for sharing this healthy treat. x
