Not for sharing.

Normally, I am very good about sharing my desserts with any friends who show up at my door. (And due to the fact that my friends know I make desserts for a living, inevitably someone will always show up at my door.) But as soon as I made these cookies, I knew I had something special on my hands. Therefore, I barred the door shut.

And contemplated building a moat around my house.

Peanut Butter Cookie Dough Cookies

Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup plus 3 tbsp raisins
  • salt to taste (I used a little over 1/4 tsp, but I like salty pb cookies!)
  • 2 tbsp roasted, unsalted peanuts (If you can only find salted, reduce or omit added salt)
  • 1/8 tsp pure vanilla extract

Instructions

Throw everything into your food processor (I used an Osterizer) and combine until very smooth. Roll into balls, cookies, bars, or simply eat shovel the dough into your mouth, straight from the machine. Dough can be stored on the counter, in the fridge, or in the freezer.

    Hi Katie!
    I made these, and the taste and texture is good – like everyone says! I’m wondering if you had the problem of these being really greasy. I literally had a puddle of grease on my counter after I made these, and my hands were coated with oil. Weird huh?? Did anyone else have that problem? I did not add extra oil so i found this strange.

      Hmmm… I didn’t. Maybe it’s a difference in the pb we used? Or, did you fridge the dough before rolling into balls/bars?

        I did not refrigerate them, and I used TJ’s natural peanut butter….hmmm. Tis a mystery! 🙂

          Try refrigerating the dough first. It makes them harder. Also, I used WF pb, which is kinda dry to begin with.

      What about subbing an equal amount of pitted dates (such as SunMaid)?

    I didn’t have raisins, so I used cranberries. My youngest said, “Hey, these taste like pb&j!” They look like it too! Now to hide them so I can quit eating them!

      Love your idea to use cranberries! I wonder how they’d taste with dried cherries… or maybe even blueberries! You just opened up so many new ideas for me!

    I just made these. HOLY COW. I have eaten half of them already. Luckily they are relatively healthy! I added some cocoa powder to make them chocolatey (I know you would approve).
    I love finding recipes where I have all the ingredients in my cupboard already!

    I just discovered your website through Facebook and knew I had to try these, as I had all the ingredients.

    I use the Valencia w/ toasted flax peanut butter from Trader Joe’s, and dates instead of raisins (no raisins in the house right now, but I’ll be sure to get some). Absolutely delicious! Such a satisfying and wholesome treat to quiet down the sweet tooth!
