Peanut Butter Covered Strawberries


Forget chocolate.

Okay, no wait.

I didn’t say that!

You didn’t hear that! Don’t ever ever ever forget chocolate. Never ever. NEVER!!!

But maybe…

Maybe just put the chocolate aside for today (or for an hour; however long you can last), and try out this peanut butter twist on the classic chocolate-covered strawberries:

They’re like all-natural peanut butter and jelly bites. Smile

And very stupid-simple to make.

Peanut Butter Strawberries

(gluten-free and can be sugar-free)

  • 4 tbsp peanut butter (or another nut butter, or sunbutter)
  • 1 tsp virgin coconut oil (see “nutrition link” below, for substitution notes)
  • stevia drops to taste, or 1.5 tsp agave or maple syrup
  • fresh strawberries (or bananas, or other foods to dip)

Have a parchment or wax-lined baking sheet ready to go (and clear space in your freezer). Put all ingredients, except berries, in a cereal-sized bowl, and stir until well-combined. If your nut butter is from the fridge, you might need to heat it a little for easier stirring. Dip berries (or bananas, or pretzels, truffles, or whatever you desire), set onto the tray, and immediately freeze. Due to the nature of coconut oil, these are best kept cold.

    Does anyone know of a good place to get affordable fresh ground almond butter? In Atlanta, I get it at Dekalb Farmer’s Market for $4.99 / lb., but I hear Trader Joe’s has it for $3.99 / lb??? I *heart* almond butter….wait, I *HEART* chocolate, but I do love almond butter too ^_^

      I’m also in Atlanta, and I imagine fresh-ground is indeed probably cheapest at YDFM (have never seen fresh-ground at TJ’s). But you can try Sevananda (in L5) or Rainbow Natural Foods (on N Decatur).

    Awesome idea on a modern classic 😉 I say peanut butter has a way of just making everything better! I would love to try that coconut oil/peanut butter mix on a banana too!
    I prefer just making my own peanut butter in my food processor- I find it cheaper and I always enjoy mixing up the add-ins to create my custom flavored PB!

    Omg this is genius and I’m not sure why I’ve never thought of it before! I think it would also be delicious to dip them in dark chocolate- then it would be like reese’s flavored strawberries…mmm. Or it would be great to cover them in mini chocolate chips! Haha obviously chocolate needs to happen in some form!

    I am currently LOVING Earth Balance Coconut Peanut Butter! I put it on everything…. or I like to eat it with a spoon! 😉

    Other than “nut butters”, I love Trader Joe’s Cookie Butter or Lotus Creamy Biscoff Spread! Delicious! Katie, have you ever tried those? They’re vegan, I think!

      Megan, I found Earth Balance Coconut Peanutbutter and fell in LOVE! It is soooo good! I put it on all types of food – pretzels, apples, carrots, bananas, crackers, and even ice cream! I bought a whole case of it so I don’t run out. When I first bought it, I devoured the jar much too quickly, and when I realized I was out, I made some toast with regular Peanutbutter. But it was gross and I couldn’t finish it. I used to love it, but Earth Balance Coconut Peanut butter was so good that compared to normal it tastes bad. Anyway, I’ve gotten side tracked here, but as you can see I love it. … Hmm I can’t remember what I was going to say. I think I’m going to go eat some peanut butter.

        What I was trying to say was:
        I used to love normal peanut butter, but after I started eating Earth Balance, I didn’t like normal peanut butter because I was comparing it to the goodness of Earth Balance

    Costco’s Kirkland brand is pretty awesome, super cheap!! It USED to be organic, but Kirkland switched to conventional when there was a peanut shortage last year and haven’t switched back. Just store it up-side-down a day or two before you stir it, to make mixing easier!     I’ve done this before with straight-up peanut butter (no sweetener or coconut oil). You definitely have to keep them cold since the lack of coconut oil means they don’t set up all that well, but they’re so good!

    Ever since I started buying the freshly ground raw unsalted peanut butter you get near the bulk bins at health food stores, I can’t eat anything else. It is addictive and amazing!!!
