Peanut Butter Covered Strawberries


Forget chocolate.

Okay, no wait.

I didn’t say that!

You didn’t hear that! Don’t ever ever ever forget chocolate. Never ever. NEVER!!!

But maybe…

Maybe just put the chocolate aside for today (or for an hour; however long you can last), and try out this peanut butter twist on the classic chocolate-covered strawberries:

They’re like all-natural peanut butter and jelly bites. Smile

And very stupid-simple to make.

Peanut Butter Strawberries

(gluten-free and can be sugar-free)

  • 4 tbsp peanut butter (or another nut butter, or sunbutter)
  • 1 tsp virgin coconut oil (see “nutrition link” below, for substitution notes)
  • stevia drops to taste, or 1.5 tsp agave or maple syrup
  • fresh strawberries (or bananas, or other foods to dip)

Have a parchment or wax-lined baking sheet ready to go (and clear space in your freezer). Put all ingredients, except berries, in a cereal-sized bowl, and stir until well-combined. If your nut butter is from the fridge, you might need to heat it a little for easier stirring. Dip berries (or bananas, or pretzels, truffles, or whatever you desire), set onto the tray, and immediately freeze. Due to the nature of coconut oil, these are best kept cold.

    I’ll have to try this soon, I just put all my strawberries in the freezer. I like pb2 or make my own in the vitamix.

    Ok two questions: Do these get runny when they are defrosted, like if you were to serve them at a party and they sat out for a little while. AND is there a way to maybe cover them in chocolate and peanut butter? Cause really the only thing better than peanut butter and chocolate is peanut butter and chocolate on a strawberry!

    Favorite brand of nut(ish) butter: I.M. Healthy Chocolate Soynut butter, I.M. Healthy creamy soynut butter, and (my personal like thus far) Biscoff creamy spread. We have a bunch of food allergies in my house between my daughter and me so I have to use the most allergy friendly stuff out there. I love this pb strawberries recipe. I think I can get my big-kid-Marine-husband to actually snack on them, and considering they are healthy enough for him to eat without going overboard (he’s a cookie monster, downing packages in one sitting). YAY!

    First things first- MMMMMM. But here’s my suggestion: after dipping in the PB, THEN dip in chocolate. Because PB/Chocolate combos never get old.

    And my favorite nutbutter? I love me some of the new Jif Hazelnut Mocha Spread, Almond Butter, and when I need to be a little bit healthier, Better ‘N Peanut Butter. But mostly the mocha spread. Also, I like the cinnamon raisin by PB and Co but Planters is now making some with granola clusters! (squeals excitedly). I love nut butter. I really do. If I was allergic… things would be very sad.

    I have never thought about putting peanut butter on strawberries, even though I put the two flavors together all the time in sandwich form.

    Does the peanut butter harden up at all or does it stay soft? Just trying to think ahead if I were to bring this to a picnic or covered dish.

    where do you typically go grocery shopping? i find that buying organic/whole grain, etc tends to be a little expensive. do you usually shop at whole foods or do you go other places?

    I have to laugh! My blog button is a straberry dipped in peanut butter! I love the combination together!!! My favorite nutbutter is my homemad nut butter otherwise I like Trader Joe’s Almond Flax Nut Butter or Justin’s.
