Pecan pie cookies you can make in minutes.
Delicious and good for you at the same time. If you’ve ever had a pecan pie Larabar, that’s exactly what these pecan pie energy bites taste like.

Pecan Pie Babies
(raw and gluten-free)
- 1/2 cup raw pecans (For all substitutions on this recipe, see nutrition link below) (52g)
- packed 1 cup pitted dates (I use Sunmaid, found in regular grocery stores near the raisins, as they are softer and stickier than the ones found in natural food stores.) (160g)
- 1/8 tsp salt
- 1/4 tsp pure vanilla extract
- optional: chocolate chips (or mini chips, or a piece of your favorite chocolate bar)
Combine all ingredients in a food processor until it makes a crumbly dough. (You can add the optional chocolate chips either before or after blending.) Pour crumbles into a bag and smush into one big ball. Remove from bag and form little balls. Or you can make bars or cookie-cuttered shapes if you prefer. This can also be made in a Magic Bullet: halve the recipe for best blending in a bullet.

So cruel to make us choose- I cant decide between quinoa chocolate cookies and mint chocolate chip. My heart says mint chocolate chip all the way but my brain is saying quinoa chocolate is high protein- easier to justify as healthy for you and the kids.

I think the flour less sugar cookies would be so great! That’s where my vote goes, CCK. Not that they don’t ALL sound delicious! But for me, my first pick would DEffinately have to be those ones. Sugar cookies!
If the jar ones are a gift you can give, that’s what I need to see! As of now, I’ll be giving my sister a regular old cookie-ingredients-layered-in-a-jar-with-recipe for Christmas, but a brand spankin’ new vegan recipe would be SOOOOO much more fantastic!!! Can’t wait to see all of these, though!

When I was rolling them my hands were covering in oil. Is that how it is supposed to be? Are dates really good for you if they have that much oil in them?

I have had gastric bypass and I am extremely sensitiy to sugar. Causes severe nausea. I need totally sugar free recipes. I tolerate Slenda well. Any recipes that splenda work well with?
