(For those who haven’t read Harry Potter, a “muggle” is a person who lacks magical ability.)

Red Pepper Magic Soup
(Makes 1 generous serving)
- 200 grams raw, sliced mushrooms
- 200 grams red pepper slices
- Oil, water, or broth for sautéing
- Milk of choice (I like almond milk)
- Garlic (I use 1 and 1/2 tablespoons)
- Salt to taste
Sauté the peppers over high heat in your sautéing-liquid-of-choice, with a dash of salt. After about a minute, add the garlic. When the peppers are soft, add the mushrooms and a bit more salt. Stir fry for a few minutes more, then transfer to your food processor, blender, or Magic Bullet. Add the liquid and blend. I like to leave some of the mushrooms out of the blender (to be added in after blending, for extra chew).
Speaking of Magic… Harry Potter comes out today. Anyone else excited?

I totally got your “muggle” title. Made me laugh. My son got us all wrapped up in the stories…so I’ve read them all and seen all the movies.

I haven’t kept up with the Harry Potter movies, but I loved the books. They’re great fun.
I made Magic Soup today because it’s crappy and rainy here. My soup was made of blended broccoli, cauliflower and carrots with some vegetable broth. Not enough taste so I added cumin and chili powder to give it more spice. Delicious Magic Soup!

Wow your soup is making me H-U-N-G-R-Y! What a great idea for leftovers. I usually don’t ever have many left but I will keep this in mind. Usually when my veggies are on their way out I will put them all in a pot and boil them up into a soup and if there is too much for me to eat I will freeze different portions.
Katie, your creations are so innovative. Blended soup, what a clever use of leftovers! Warm soups are so hearty and soothing. Sometimes, when I want something satisfying, I use kabocha puree as a base, throw in some stirfried vegetables, maybe some brown rice, or sometimes I just keep it simple with olive oil, salt, and pepper. So versatile!
