So easy a Muggle can do it


(For those who haven’t read Harry Potter, a “muggle” is a person who lacks magical ability.)

Red Pepper Magic Soup

(Makes 1 generous serving)

  • 200 grams raw, sliced mushrooms
  • 200 grams red pepper slices
  • Oil, water, or broth for sautéing
  • Milk of choice (I like almond milk)
  • Garlic (I use 1 and 1/2 tablespoons)
  • Salt to taste

Sauté the peppers over high heat in your sautéing-liquid-of-choice, with a dash of salt. After about a minute, add the garlic.  When the peppers are soft, add the mushrooms and a bit more salt.  Stir fry for a few minutes more, then transfer to your food processor, blender, or Magic Bullet.  Add the liquid and blend.  I like to leave some of the mushrooms out of the blender (to be added in after blending, for extra chew).

 

Speaking of Magic… Harry Potter comes out today.  Anyone else excited?

    is it strange that despite the amaze soup recipe, the main thing I noticed in this post is your nails. They are gorg. girl! I have a bad nail biting habit so I have the hands of a 12 year old boy.

    I entered the Harry Potter fan base late myself. Only after a friend bought me the first two books and made me promise to read them. Then I was hooked!

    Wait, so the movie came out? Because I’m pretty sure the last book came out since I read it 😉 I looove Harry Potter, but I haven’t been keeping up with the movies. Every time I watch one, I get disappointed because they’re not as good as the books.

    I’m a proud muggle! I love HP, the books anyways. The movies are entertaining but I haven’t gotten around to seeing the last 2 :X
    So I actually used leftover soup tonight as pasta sauce, does that count? It was actually really really good! I made an amazing split pea soup last night with split peas, adzuki bean flakes, artichoke, onion, mushrooms, and “not beef” broth and topped it with a soy swiss slice.
    Tonight I used the leftovers on top of a giant bowl of spaghetti (still hugging my carbs!) and added a little vegan parm.

    OMG I did not realize there was more Harry Potter coming out. I have only seen a few of the movies. It was good but I never really got into it.

    Oooh, ok have a great idea. Tonight is chicken curry night. I will intentionally make too many veggies so I can make some curry soup, that sounds amazing.

    My problem is I rarely ever have leftover veggies because I love to eat ’em! 🙂
