Just in case you get bored of the Single-Lady Cupcakes.
Now you can have single-serving cookies too!

Single-Lady Cookies
(makes 1 big cookie)
- 5 level teaspoons flour (15g) (all-purpose, oat flour, or spelt)
- 1/16th tsp baking soda
- 1/16th tsp salt (omit if using margarine)
- 2 tsp oil or pre-melted margarine (or applesauce, only if you like cake-y cookies)
- 1/4 tsp pure vanilla extract
- A little milk of choice, if needed (I use almond milk)
- handful chocolate chips (or raisins, nuts, etc.)
- sweetener (My testers liked 1 tsp brown + 1 tsp white sugar. You can easily sub coconut sugar or sucanat. Or try xylitol for a sugar-free cookie.)
Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

A different single-lady cookie idea: Just make a regular batch of cookies, roll them into balls, and then freeze the balls. They’ll keep for at least a year, and you can defrost and bake them in whatever quantity you wish!

Maybe try the One Minute Cake in a Mug recipe? It’s the closest thing I have to a single-serving brownie.

I figured nutrition information based on 1 tbsp skim milk, 1 tsp chocolate chips, and sweetener as suggested.
240 calories, 11 g fat, 33 g carb, 1 g fiber, 4 g protein
As soon as I saw this, I had to try it. As I was mixing it up, I thought to myself, “This might be good with some pumpkin in it.” So, I added a couple teaspoons of pumpkin and a half teaspoon of pumpkin pie spice. It turned out SOOOOOOO GOOOOD. I’m still giving you all the credit though, because I would not have known where to start this by myself.
Also, thank you for giving creating such delicious desserts that don’t wreck my healthy eating efforts. I recommend you to all my friends! 🙂
So, just wanted you to know that I made these tonight! I changed up and replaced one tsp of flour for 1 tsp of PB2. I love peanut butter chocolate chip cookies!!
I also made this in the toaster oven. Of course I did NOT preheat it (does anyone pre-heat a toaster oven?) so it did take longer to bake, about 15 min for me. Yummmmy!

What is the nutritional content on this recipe i cant find calories on any of the single serving recipes? Can anyone help please
Sorry, I don’t have nutritional info for this cookie. I didn’t start including calories until about a year ago. But all posts as of that time will have nutrition info :).
I just tried this recipe! I was really in need of something sweet and I have been trying out some of your recipes the last couple weeks. I have made the 1-minutes choc. cake 3 times and it is delish! I figured I would try something else today. My cookie does not look like yours. It puffed up quite a bit and is cakey (probably because I used applesauce) but it is amazing! It is sort of a combination of a scone and a muffin. Thank you for helping me satisfy my sweet tooth while keeping my WW points in check. 🙂
P.S. I also added some shredded coconut. It adds some nice crunch and flavor.
I made this tonight and it was yummy! I used melted coconut butter instead of oil and added a little oatmeal. Ill be trying out more of the single serving recipes!
I just made this with 3 T spelt flour and 2 T rolled oats (not ground into flour, but whole), coconut oil, 70% choc chips and walnuts. Amazing!!!! Thanks! :))
