Single Lady Cookies


Or, rather, cookie.

Just in case you get bored of the Single-Lady Cupcakes.

Now you can have single-serving cookies too!

Single-Lady Cookies

(makes 1 big cookie)

  • 5 level teaspoons flour (15g) (all-purpose, oat flour, or spelt)
  • 1/16th tsp baking soda
  • 1/16th tsp salt (omit if using margarine)
  • 2 tsp oil or pre-melted margarine (or applesauce, only if you like cake-y cookies)
  • 1/4 tsp pure vanilla extract
  • A little milk of choice, if needed (I use almond milk)
  • handful chocolate chips (or raisins, nuts, etc.)
  • sweetener (My testers liked 1 tsp brown + 1 tsp white sugar. You can easily sub coconut sugar or sucanat. Or try xylitol for a sugar-free cookie.)

Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

A different single-lady cookie idea: Just make a regular batch of cookies, roll them into balls, and then freeze the balls. They’ll keep for at least a year, and you can defrost and bake them in whatever quantity you wish!

    I made a larger batch because I wanted a few smaller cookies to share.
    I made my own oat flour and applesauce, and I did need some milk with it. I also used a dash of cinnamon.
    This is the first time in ages that I haven’t felt guilty (or disgusting from added sugars) from eating more than one chocolate chip cookie. My sister-in-law enjoyed the oat-y flavor and the hint of apple.

    Didn’t have a 1/16 tsp measuring spoon, so obviously I doubled the recepie. Ate the whole thing (pretty sure that defeats the whole healthy thing, but oh well)

    I made this yesterday and it was super good! I made mine with apple sauce though and it was definitely more cakey than a cookie. Next time I think I will try it with the oil instead. Awesome recipe!

    Hi! I just wanted to thank you for your single serve desert recipes! They are saving my waistline (as I will eat an entire batch of cookies in two days!). The only trouble is that they are so easy to make it is hard not to go back to the kitchen and make more ;).

    Just made this in the microwave and it worked quite well (not as perfect as an oven baked cookie, but good for when you need a cookie NOW or can’t use an oven.) I recommend oiling the plate that you microwave it on as the cookie stuck a bit. Thank you Katie for your small batch and single lady recipes!
