Just in case you get bored of the Single-Lady Cupcakes.
Now you can have single-serving cookies too!

Single-Lady Cookies
(makes 1 big cookie)
- 5 level teaspoons flour (15g) (all-purpose, oat flour, or spelt)
- 1/16th tsp baking soda
- 1/16th tsp salt (omit if using margarine)
- 2 tsp oil or pre-melted margarine (or applesauce, only if you like cake-y cookies)
- 1/4 tsp pure vanilla extract
- A little milk of choice, if needed (I use almond milk)
- handful chocolate chips (or raisins, nuts, etc.)
- sweetener (My testers liked 1 tsp brown + 1 tsp white sugar. You can easily sub coconut sugar or sucanat. Or try xylitol for a sugar-free cookie.)
Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

A different single-lady cookie idea: Just make a regular batch of cookies, roll them into balls, and then freeze the balls. They’ll keep for at least a year, and you can defrost and bake them in whatever quantity you wish!

I discovered that it’s possible to burn a single lady cookie. :S oops. I tried it in the microwave and a minute and forty five sec was just too much for the poor thing. The unburnt edges were very tasty nevertheless.

Yee-haw for single- lady recipes! Love that you made a cookie recipe, as there’s times when I just want “one cookie”, but don’t have time or want to make a whole batch. Most of my recipes on my blog serve one, so I feel bad I don’t reach out to those who want to cook for more than one, but hey, I’m a single- girl after all 🙂
Brownies would be fun next! Iced with coconut butter, that is!
I say single serving blondies. I love those but don’t want to make a full pan because I’ll eat them aaaall day.

Sounds delicious! I have found that for recipes such as this a fantastic sub that is in between oil/ applesauce is melted banana, freeze it and then thaw it in the micro or on the stove and it gets liquidy when you mash it. The result is a baked good that is not as cakey as when you use the applesauce PLUS it makes things really sweet so you can cut back on the sugar! I often make protein cakes that are kind of a cross b/t your protein cake, your single lady cupcake that I’ve been making for years and I have tried everything from applesauce to banana, to oil to pureed prunes to pumpkin and the best result is by far melted banana you just have to mash it into the dough really well.
I bet these cookies would also be great w/ half flour and half oatmeal!

Wow, this looks so yummy! I think I could make this in the toaster oven? I wouldn’t feel bad eating one of these for breakfast, with some fresh fruit! Actually, I think I’ll go make the dough for tomorrow morning, right now! It’s so simple looking, and I’m glad there’s an applesauce option. I’m gonna make mine raisin…. and I’ll let you know what GF flour combo I do!
