Now you can have single-serving cookies too!

Single-Lady Cookies
(makes 1 big cookie)
- 5 level teaspoons flour (15g) (all-purpose, oat flour, or spelt)
- 1/16th tsp baking soda
- 1/16th tsp salt (omit if using margarine)
- 2 tsp oil or pre-melted margarine (or applesauce, only if you like cake-y cookies)
- 1/4 tsp pure vanilla extract
- A little milk of choice, if needed (I use almond milk)
- handful chocolate chips (or raisins, nuts, etc.)
- sweetener (My testers liked 1 tsp brown + 1 tsp white sugar. You can easily sub coconut sugar or sucanat. Or try xylitol for a sugar-free cookie.)
Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

A different single-lady cookie idea: Just make a regular batch of cookies, roll them into balls, and then freeze the balls. They’ll keep for at least a year, and you can defrost and bake them in whatever quantity you wish!

I just recently found your blog, and let me just say if I wasn’t married already, I would probably propose to you. You’re so amazing haha (I mean come on, I totally used to eat all my meals with chopsticks as well, but I left them all back home when I moved D:)! Since I cannot however, me and my hubby (well mostly me, muwahaha) can enjoy your awesome recipes! You’re an inspiration to lots of people, whether they are vegan or omnivore (or hardcore steaklovers I’m sure!) It’s blogs like yours that definitely help those who are interested in leading a more vege/vegan lifestyle see how easy and tasty it can be to adjust (such as myself) who also love to bake/eat/swim in chocolate etc!
ANYWAY, enough gushing, I just wanted to let you know I’ve just made and consumed a very delicious single lady cookie. I was very limited in what I had (didn’t go shopping today, so no chocolate!), and combining with another reader’s (Brandi’s) tweaks, I cut the flour down to 4tsp since I was using regular wholewheat flour, added 1tsp of oat milk (soo delicious), and added a sprinkle of allspice. Microwaved it for 50 seconds…and OH MAN, it was so delicious! Reminded me of Christmas haha, was cakey but not dry (I used oil), and reminded me of hermits or gingerbread. I’ll definitely grab some spelt flour and chocolate chips and try your recipe properly, as well as other flavor combos, but I just wanted to thank you for such awesome inspirations and how much effort you put out there for your readers! Hmmm… I haven’t actually made a bigger batch yet LOL! I do have a chocolate chip cookie recipe listed on my blog, but I haven’t “healthified” it yet; I posted it a long time ago.

If I wanted to make an oatmeal chocolate chip cookie (my fav) should i sub it for some of the flour?

I actually don’t know… I would assume that yes, you should replace some of the flour if you’re going to use oats. But I can’t say for sure. If you try it, let me know how it goes! 🙂
Mmm, I just made this with a few alterations and it’s so yummylicious and convenient! Instead of oil I used 3T soy milk and then I nuked it on a lower setting (480W) for 2 minutes. It’s more like a single pancake than a cookie, but fabulous nonetheless (maybe I should have left it in longer but the phone rang, lol)
Oh and I sweetened it with stevia … I’m gaining confidence in sweetening small amounts of food with it but have no clue how I would do it with normal sized cakes and such. Maybe you could do a post about baking with stevia some time? Like how much should go in, if and how it changes the baked good, what we need to watch out for?
Here in the EU, stevia is not yet approved as a food, but most organic stores carry it as a “bath additive” (it’s already approved as a cosmetic) so they can’t really give any instructions on the bottle (would be a little … suspicious).

Sorry, I don’t know. But just add all the individual ingredients up to find it. Since it’s single-serving, you don’t need to do any dividing.
I just made this cookie and it was pretty good–note: vegetable oil was a bad choice in oils but it was all I had in the house! Next time I’m totally using coconut, it probably would have been WAAYYYYY better.
My husband was mocking the name of the cookie and booing the size, so he decided to Google the “single man cookie” in order to prove the size would be bigger. I laughed my butt off when his search turned up nothing because as we all know…single men don’t bake!
This is the third recipe of yours that I’ve tried and so far I’m a big fan. I love your blog and your attitude–you are so positive and sunny! It’s very uplifting to read your posts and I look forward to them daily!

Made this tonight and really enjoyed it! It has been months since I’ve had a chocolate chip cookie! It definetely satisfied that craving! Also, I made it with oat flour and it was very nice! I love the oaty-flavor 🙂
Just made this in the toaster oven! I used half spelt and half oats. Also, I added cinnamon! It came out PERFECT! The best part is there’s nothing to clean except a tiny mixing bowl 🙂 thank you for this!!

I just made this – delicious! Do you know if there’s a way to make it chewy? Mine came out really soft (just the way you like it!) but I like chewy cookies 🙂
Hmmm… I think it depends on the flour you use. And how long you cook it! And what oil/fat you use. Can you tell me more specifics about what you used?
I used all-purpose flour, coconut oil, brown sugar+agave and cooked it for 8 minutes.
Maybe try not using the agave.
And also, you could try spelt flour or ww pastry for a more dense cookie.
