Just in case you get bored of the Single-Lady Cupcakes.
Now you can have single-serving cookies too!

Single-Lady Cookies
(makes 1 big cookie)
- 5 level teaspoons flour (15g) (all-purpose, oat flour, or spelt)
- 1/16th tsp baking soda
- 1/16th tsp salt (omit if using margarine)
- 2 tsp oil or pre-melted margarine (or applesauce, only if you like cake-y cookies)
- 1/4 tsp pure vanilla extract
- A little milk of choice, if needed (I use almond milk)
- handful chocolate chips (or raisins, nuts, etc.)
- sweetener (My testers liked 1 tsp brown + 1 tsp white sugar. You can easily sub coconut sugar or sucanat. Or try xylitol for a sugar-free cookie.)
Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

A different single-lady cookie idea: Just make a regular batch of cookies, roll them into balls, and then freeze the balls. They’ll keep for at least a year, and you can defrost and bake them in whatever quantity you wish!

I guess I’ll have to make it and share… Sidenote, I gave my ten year old sister a bite of my single lady cookie, and she said it was the best cookie she’d ever eaten, and it was FAT FREE. Woah! I just made this after three attempts! First time I accidently used five tablespoons of flour instead of 5 teaspoons. Second attempt I actually read the recipe properly but then proceeded to catch it on fire in the microwave. Third attempt it was FANTASTIC! So soft and crumbly! I’ll def. make these again! I love all your recipes that I can never decide what to make! Thank you for sharing all your recipes!

Yes, if a recipe has nutrition facts, they’ll be listed in a link that says something like “click for calorie info” right under the actual recipe ingredients in that post. All of my newer recipes have nutrition facts.

This seems like an awesome recipe, but i was just wondering if it would be possible to add some oats. If so, what changes should i make to the recipe and cooking instructions? i am in no way an expert on changing recipes so any words of advice would be really helpful.

Hi Sophie, sorry to jump in here but if I were to try this with oats I would probably eliminate 1-2t of flour and add 2t of oats. It’s hard to say what will work with such a small recipe, but I hope it works out for you!

You are a genius! Tonight I had a total sugar craving. I was dead tired and craving sugar and wanted something NOW. I am currently trying to not eat sugar. I have followed your blog for a while now, but haven`t tried any of your yummy recipes..until now and now I`m hooked! I tried your single serving cookie ball, and single serving cookie:) As sweetener I used 1 tsp xylitol and 1 tsp brown coconut sugar, and added raisins instead of chocolate chips. What a delicious recipe, almost taste like regular cookies, except much more healthy. My sugar craving is totally satisfied and I`m happy again:) So simple, so delicious! Thank you!
