It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

My love of all things chocolate-chip. So this healthy chocolate chip mug cake—made in less than 5 minutes—will always sound good to me!

It’s delicious topped with coconut ice cream or my Homemade Frozen Yogurt.
Chocolate Chip Cookie Mug Cake
Single Serving Chocolate Chip Cake In A Mug
Ingredients
- 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1.5 tbsp xylitol or sugar of choice
- pinch pure stevia, or 1 more tbsp sugar
- 1/4 cup applesauce
- 1 1/2 tbsp milk of choice
- 1/2 tbsp oil or more milk of choice
- 1/4 tsp pure vanilla extract
- 1-3 tbsp chocolate chips
Instructions
To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Or do you look exactly the same? And are you a completely different person in terms of personality? Sometimes I look at people who have changed so much over the years, and I don’t understand how that happens… Do they just wake up one day and say, “I think I want to become a completely new person, starting today”?

I’ve changed a ton over the past 5 years. After all, I am a teenager. I’m also a lot thinner than I was a few years ago. Not sure if my personalities changed much, though. But a lot of my friend’s personalities sure have!
Well I know what I’m having for dessert tonight!
I’ve lost about 55 pounds since 5 years ago so I definitely look different!

I don’t look TOO different, other than my hair is no longer blonde and I am not nearly as skinny–not a tragic amount of gained weight but enough to fill out my face and look just slightly fuller all over. Other than that, not really! Lol.

I love quick and easy, single serve desserts. Sometimes you just need dessert ASAP and can’t be trusted with multiple servings (wait, that’s me pretty much everyday, ha!). I loove a lot different from just a few years ago. I always look at how YOUNG I think I look, even though 2-3 years isn’t that much time.

When I look back on pictures from a few years ago, I don’t think I have changed that much. My weight has, I yo-yo’ed a bit and you can tell a lot in my face, but *if* that had stayed the same, I think I’m pretty much the same. Almost embarassing to look at pictures that are 5 years old and realizing I am wearing the exact same shirt as in the pic! Anyone else have that happen? 🙂
I still have a dress from the 8th grade that I wear….and I will be 30 this year!!!! Not shockingly, I have not changed much over the past 15 years.
Love single servings because even if I’m baking for two I find that there is often just too much to eat. I have a sweet tooth, but even half a cake/cookie tin can be too much for me sometimes 😉 Plus, this way, I don’t have to share!
I think my personality is totally different now from 5 years ago, but not necessarily how I look. I still have the same hair colour (although the length changes ) and am a similar weight, but my lifestyle and situation has changed a lot, so I’m different in that respect.
I always make mug cakes in the microwave but I know it will be better if I bake it, maybe I’ll finally convince myself that it’s wort that wait this time because that looks good!

Looks-wise, I still look the same as I did ten years ago… which is pretty impressive as (at nearly 33) I’m not exactly a young woman anymore. 😉
Personality-wise, I HAVE changed. Terrible things happened to me a couple of years ago but it’s made me a stronger person, so I don’t take as much crap as I used to.
I think I am very much the same as I was five years ago, only happier. 🙂

I’m always a way bigger fan of mug cakes over single serving cakes in the oven. Convenience is my main game.
Oh gosh, I look SO different from how I looked 5 years ago, I had black hair and my weight was completely different as well. Some people actually don’t even recognize me, which is kind of funny.
Katie, I’m gonna straight up answer your question and say, “Yes, I do wake up one day and decide to be different!” 🙂 I get a kick every once in a while to totally change how I dress and how I do my makeup and hair. It’s not super drastic from my style before, it’s just noticeably different.
Plus I fluctuate in my weight alot, which I’m trying to fix by exercising and eating better. But I just always make sure I try to change for myself first before others or what I think others would like me to look like. Love you Katie! 🙂
I love your single serving recipes because so often I only make food for myself. I’ll come across a recipe that serves six and I’ll think: “Okay, so what’s 1/6 of a 1/3 cup?” Haha! You know how to please the single eaters! As for changing, I think we all evolve as individuals over time, but nobody ever really becomes a different person! I’m still myself; I’m just a different version of myself than I was five years ago.

Thanks for letting me know! I recently switched ad networks, so we’re still working out the kinks! I’ve asked for no direct meat ads, so the only thing that *should* pop up sometimes is if it’s a grocery store ad or something, and the grocery store has a picture of meat.
Unfortunately, it might also be a google adsense ad (they run when my ad network doesn’t have anything to run). I don’t think I can do anything about those… apparently they are set up to post ads based on individual readers’ browsing history 😕
No biggie just thought you should know…

This looks amazing. I saw something like this for a single serve chocolate cake once, but I can’t remember where. And I look exactly like I did in kindergarten. Fortunately, my personality has changed since then.
