Single Serving Chocolate Chip Cake In A Mug


It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

I also finally updated my About Chocolate Covered Katie page.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

My love of all things chocolate-chip. So this healthy chocolate chip mug cake—made in less than 5 minutes—will always sound good to me!

Single Serving Chocolate Chip Cake In A Mug

Ingredients

  • 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1.5 tbsp xylitol or sugar of choice
  • pinch pure stevia, or 1 more tbsp sugar
  • 1/4 cup applesauce
  • 1 1/2 tbsp milk of choice
  • 1/2 tbsp oil or more milk of choice
  • 1/4 tsp pure vanilla extract
  • 1-3 tbsp chocolate chips

Instructions

To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Or do you look exactly the same? And are you a completely different person in terms of personality?     Love mug cakes and small microwave cakes. It keeps things small so I can try the next thing.

    Other than losing weight, I haven’t changed since before high school. I have a job where I run into people all the time. Mostly I don’t recognize them – they recognize me! My 4th grade teacher even recognized me. It’s ridiculous!

    I haven’t made a mug cake before. I keep meaning to.

    I totally look different than five years ago. I won’t go into too much detail in a comment but that’s when I got really ill with mono and then my eczema got bad, so I bloated with steroids and put on weight. So, in a nut shell I’m healthier, happier and slimmer five years on.

    I added some date honey, and it ended a little too sweet, but it is still awesome!

    Great recipe! So whenever I make one of these microwavable desserts, they always turn out more like a pudding then a brownie or cake. I cook it for several minutes too. The top part of the mix is usually cooked right but everything else is pudding like. Any tips on how to make it less pudding-like? 🙂

        Mug cakes in general- I was thinking I should try using a wide bowl instead of a mug to even out the cooking. I’m excited to try this recipe that way!

          Yes, I made this tonight and while it tasted yummy there was still batter nearer the bottom and all the chocolate chips had sunk, so I think I’ll put it for about 2 mins in my microwave next time. I’ll also divide the batter between two ramekins because this cake completely filled a mug to the top and was a bit too much for little ol’ me!

            Yeah I ate it all >< and now I feel sick! I had to cook mine for 2.5 mins. 1/4 a cup of flour is way too much for anyone I think. And flour isn't really that healthy anyway. I wonder if it would work with a little bit of almond meal…

    This looks amazing! I have everything except for chocolate chips, so I’m going to have to wait and pick some up tomorrow. Oddly enough I look about the same, which is great because I turn 30 in a few months! If you ask me, looking like I’m still a twenty something is awesome!

    I just started following your site, and I have to have something chocolate while I read your recipes andcommentary, sorta like when I watch the movie “Willie Wonka and the Chocolate Factory” lol!

    I feel like I look exactly the same as I did 5 years ago. As far as my personality, I am essentially the same person, but my spirit is now routed through a mother’s heart : ) I have a 4 1/2 year old, and I am due any day now with baby boy #2. I feel such a greater sense of peace and gratitude than I used to in a lot of ways. But I am still fun, carefree, and LOVE being a vegan and a chocoholic!!

    Not really related to this post, but I have been looking for this.
    So, I am an high intensity runner(HS level) and I’m fed up with drinking bad chocolate milk (Nesquik, Olgeltine). Chocolate milk is an amazing post workout drink that helps replenish vitamins lost in workouts (not to mention, great tasting!). Do you have a good chocolate milk recipe that’s easy to make?

      She has a chocolate nutella milk recipe made with hazelnuts (cashews would work, too), or the chocolate protein milkshake is great if you’re okay with tofu!

    I have changed over the years. Personality, appearance, weight, you name it. I still believe I am fully the same person I always have been, I have just grown with time and experiences. I believe it’s the same way with most everyone else too!

    Hi Katie!
    I just made this and it is the most delicious cookie cake EVER. I used white whole wheat flour, 1 1/2 T of xylitol, and 1 T of brown sugar for a more cookie dough taste. I microwaved it and came out DELICIOUS. I now know what dessert I’ll be eating everyday for the next month 😉

    It was super tasty, my husband and I enjoyed them after the kids went to bed (doubled the recipe) and used some whole milk instead of oil. We will definitely make these again!
