Single Serving Chocolate Chip Cake In A Mug


It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

I also finally updated my About Chocolate Covered Katie page.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

My love of all things chocolate-chip. So this healthy chocolate chip mug cake—made in less than 5 minutes—will always sound good to me!

Single Serving Chocolate Chip Cake In A Mug

Ingredients

  • 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1.5 tbsp xylitol or sugar of choice
  • pinch pure stevia, or 1 more tbsp sugar
  • 1/4 cup applesauce
  • 1 1/2 tbsp milk of choice
  • 1/2 tbsp oil or more milk of choice
  • 1/4 tsp pure vanilla extract
  • 1-3 tbsp chocolate chips

Instructions

To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Or do you look exactly the same? And are you a completely different person in terms of personality? Sometimes I look at people who have changed so much over the years, and I don’t understand how that happens… Do they just wake up one day and say, “I think I want to become a completely new person, starting today”?

    MMM, can’t wait to try this with GF flour, makes a nice little single serving treat!

    I’ve definitely changed a lot over the past few years, living away from home for university and going on two international exchanges helped me grow up fast and gain confidence.

    As well, major dietary changes (no gluten, no dairy, no processed food) means I feel MUCH better now that my IBS is under control. I also altered the ratio of my diet and eat a lot less carbs, lots more veggies, berries, quality protein and healthy fats. Reading your blog and making your recipes have helped me become less ‘afraid’ of fat and learn that eating healthy fats has made my hail and nails much stronger. Thanks Katie!

    Just tried this using a microwave and a mug. So delicious, can’t believe it’s only 169 calories (I’m hoping that includes the oil!). I’ve just had a huge meal but couldn’t resist trying this out. Used xylitol, white flour (run out of spelt), and almond milk and it tasted great! I did put a tiny dollop of caramel sauce on because I’ve got some left over and I just had to! 🙂 Thanks for the awesome recipe.

    As for the 5 years ago question, I am 36 and don’t think much changes between 31 and 36 (so, yes, I look exactly the same). But, I ran into some friends I haven’t seen in ten years and when we parted they said “I don’t know if it’s appropriate to comment, but you haven’t aged…It’s creepy.” That felt pretty good, even if the implication was that I had practiced some witchcraft. No witchcraft, just a good healthy diet. Made tastier thanks to you. 🙂

    Love the mug desserts! Perfect way to stop yourself from eating a little too much.
    As for me five years ago.. I’m completely different. Including my appearance. I decided four(ish) years ago that I didn’t like who I was and I’ve spent every day since making progress to completely change myself. Now I’m proud of who I am. 🙂

    Well, i look completely différent from five years ago because I was ten years old back then, but I think that people, when they change in older ages, change because something in their lifestyle changes, either slowly or suddenly and quick. Like different eating habits, a different job or something like this 🙂

    ooofff these single serving desserts you are posting are “dangerous” 😉 I think I’ll make this this week! I definitely look a lot different from my 5-years-younger self. I had long mop top hair (I ask myself why everyday) and I was a little chubbier than now! Personality wise I think I’ve changed too. I think it has to do with the people I am around for long periods of time. Love the updated about me pic!
