It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

Chocolate Chip Cookie Mug Cake
Single Serving Chocolate Chip Cake In A Mug
Ingredients
- 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1.5 tbsp xylitol or sugar of choice
- pinch pure stevia, or 1 more tbsp sugar
- 1/4 cup applesauce
- 1 1/2 tbsp milk of choice
- 1/2 tbsp oil or more milk of choice
- 1/4 tsp pure vanilla extract
- 1-3 tbsp chocolate chips
Instructions
To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Or do you look exactly the same? And are you a completely different person in terms of personality? Sometimes I look at people who have changed so much over the years, and I don’t understand how that happens… Do they just wake up one day and say, “I think I want to become a completely new person, starting today”?

I look pretty much the same as I did 10 years ago, but by the grace of God, I am a very different person. For some people, we wake up one day and realize that we’re not happy with the way we are, and yes, we do just decide to change. Some people seem to think we are who we are and there’s nothing we can do about it, and that acting differently than we always have in the past somehow makes us fake. I reject that idea. If we’re not happy with the way we are, then we have the right and the power to change it.
For the “chocolate chips” in your recipes, are you using unsweetened or semi-sweetened? Sorry if you may have answered this question from someone else before. BTW, I love your recipes. The first few weeks I was making your deserts, I gained almost 5 lbs because I was just eating too much! I am better at regulating my CCK dessert intake now. Thanks for sharing all these goodies.

5 yrs ago? I was 27…I definitely look different now. Gosh it’s crazy to think back and reflect. Three years ago I joined an incredible local fitness program in my hometown, a small college town in Indiana. In a year I was down 100 lbs, in 4 more months I was down another 20. It’s weird when my mom double takes and doesn’t recognize me at first. Had it not been for the program, I wouldn’t be here checking out your healthy versions of tasty goodies!

I made this last night and it was soo good. Applesauce is not my favorite, so instead I used half a banana and did the “melted banana trick”. I also melted some peanut butter with it and mixed those together. For my “milk” I used coconut creamer. I cooked it in the microwave, not sure for exactly how long. I started with 1 minute and then shorter intervals. The top looked a bit wet and spongey so I was worried it wasn’t cooking through, so I stuck a fork in it and realized it was perfectly cakey. And delicious.

I’ve made a bunch of recipes (and I’ve loved every one!). This one was delicious. I definitely agree with the people that said to split it between 2 ramekins – it made a huge difference in the texture for me. The first time I made it I used oat flour which I definitely don’t recommend. It was terrible, but I’m glad that I decided to actually try the recipe again without random substitutions since it’s one of my new favorites.

I made this and it was really good!! I used mashed banana instead of applesauce and it came out with a delicious chocolate chip banana flavor, which I loved (also only used 1 T raw sugar and no stevia for the sweetener and it was plenty sweet). I might also try subbing pumpkin for the applesauce for a fall flavor.
yum yum yum! I’ve made this twice already, it’s so good. I didn’t have a big enough mug, so i made it in a cereal bowl :p Topped with coconut yogurt, and melted chocolate chips with peanut butter, because it clearly need MORE chocolate.

This was delicious! I finally figured out why my mug cakes KEEP FAILING! The mug! I have been trying to make your mug cake recipes in my 16 oz, pretty thick mug and could not figure out why I kept getting raw, gummy dough in the middle. I used a thinner, smaller mug this time and it came out perfectly! I substituted whole wheat flour, pecans for chocolate chips, and greek yogurt+a little butter for the 1/4 applesauce. I preach about your blog all the time!

Would probably work, but the only way to know for sure is to try ;).

I had great success using half brown rice flour/half almond flour for a gf version! I had to cook it about 30 seconds longer in the microwave, though. 🙂
