It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

Chocolate Chip Cookie Mug Cake
Single Serving Chocolate Chip Cake In A Mug
Ingredients
- 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1.5 tbsp xylitol or sugar of choice
- pinch pure stevia, or 1 more tbsp sugar
- 1/4 cup applesauce
- 1 1/2 tbsp milk of choice
- 1/2 tbsp oil or more milk of choice
- 1/4 tsp pure vanilla extract
- 1-3 tbsp chocolate chips
Instructions
To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Sometimes I look at people who have changed so much over the years, and I don’t understand how that happens… Do they just wake up one day and say, “I think I want to become a completely new person, starting today”?

This recipe is soooo delicious. I used whole wheat flour, no oil (just skim milk), white sugar and a mashed banana in place of the applesauce (I didn’t have any) and it turned out awesome! Thank you for this recipe

This is a great recipe and tastes awesome! I’m just not sure 169 calories is accurate. A quarter cup of spelt flour alone is 120 calories, plus the applesauce, chocolate, and if you add sugar & oil. Can someone explain??
I just microwaved my first cake in a mug ever :), but instead of spelt- I used wholegrain buckwheat flour. It was delicious!!! Also, I didn’t add any sugar, only stevia, but I did use the 1 tbsp of oil (sunflower). Done in 5 minutes total. Thank you, Katie!

Hi, I made this recipe and it was yummy and hit spot! Thank you! I also put the ingredients into the WW Recipe Builder in eTools and it calculated 8 pps. I used Bob’s gluten-free all purpose floor, brown sugar, and 2 tbsps of chocolate chips. Luckily, I divided the batter into 2 ramekins so I only ate 4 pps worth yesterday and the other portion today.
This was very good! I made it almost as soon as I saw the recipe. Nice that you can have a treat without a ton of leftovers! Mine HAS to have more than the calories listed since 1/4 ww flour said 100 calories, and my chocolate chips said 70 calories per tablespoon. But I’m not personally all that concerned with calories, and really enjoyed this!

I used Rye flour instead,and maple syrup as sweetener (~1.5 tbsp) and coconut milk+canola.
But if I want to use oil instead of the apple sauce (don’t always have at home) do I sub the whole amount for oil or is it a different ratio?

Hmmm… to be honest, I haven’t ever tried it. You might have better luck substituting something thicker like peanut butter. Sorry I can’t be more helpful. You’ll have to experiment :).
I am obsessed with your recipes. This one in particular I eat at least once a day (which is wreaking havoc on my diet, but I can’t help myself). Tonight I was in the mood for something Christmasy and created a gingerbread version!

This recipe was great! My 5 year old enjoyed it soooo much! Will definitely make again. One thing though, I had to cook it for 30 minutes before it set. Thanks for the great recipes!!!!

My friend Kristi and I made this with a mashed banana instead of applesauce and it tastes like chocolate chip banana bread!! So yummy!!
