It’s been a while since my last post! Something came up that took me away from the computer, but things should go back to normal pretty soon. I’m trying to catch up with your emails and recipe questions.

People kept saying I needed a new photo of me, since the last one was 3 years old! Not that I’ve changed much… Some of my friends look vastly different from their high-school selves, but I think I look pretty much the same as I did even fifteen years ago. Except I had bangs back then!

Chocolate Chip Cookie Mug Cake
Single Serving Chocolate Chip Cake In A Mug
Ingredients
- 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1.5 tbsp xylitol or sugar of choice
- pinch pure stevia, or 1 more tbsp sugar
- 1/4 cup applesauce
- 1 1/2 tbsp milk of choice
- 1/2 tbsp oil or more milk of choice
- 1/4 tsp pure vanilla extract
- 1-3 tbsp chocolate chips
Instructions
To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

I’m in my fifties, so you wouldn’t think I’d change too much, but I think I’m quite different than 5 years ago. They say that as you age your waist broadens and your mind narrows. I’ve experienced the opposite. I like who I am and accept my aging body, but I push myself harder than before. I feel time slipping away and I have so much more to accomplish before my time is up. I’m more accepting of failings, myself as well as others, though I still strive for perfection. I’m open and nonjudgmental.
I NEEDED THIS so badly this afternoon, but I didn’t have any applesauce so I used plain homemade yoghurt instead. I also only used 1 tbsp of sugar because I don’t like things too sweet. Oddly, it came out like a very soft, pale steamed bun- very little crumb structure at all. Definitely not cake-ish. Still tasted great, but a warning to anyone who reads this, don’t use yoghurt if you really want a muffin!
Anyone know how I could do it without applesauce?

I’ve been eating this for a few weeks and it’s delicious. However, I do have a concern I hope you can clear up for me… I’d been calculating it as 4 points plus, but when I added the recipe into my Weight Watchers recipe builder, it was actually 13 points plus. Where am I going wrong? I do use ingredient substitutions, but they’re the ones you mention in the recipe. 🙁

I have a question about xylitol as sweetener, I read a bit about it and …. well, I guess i’ll just ask outright, has anyone had abdominal issues with it? I know that is a “side effect” of so many sweeteners, even a laxative effect. This looks so yummy and I miss baking with no one to bake for so the single servings are really great!
Are you sure about these nutrition facts? A quarter cup flour is about 100 cal. 1 tablespoon of chocolate chips a 70. So that’s 170 right there, doesn’t include the applesauce, milk, oil, or two additional tablespoons of chocolate chips.
Katie, my toddler wanted an apple cake, so we used a snack cup of apples and substituted apple juice for the milk and chopped up apples (food processor) for the apple sauce. We’re eating it now, and it’s divine! We omitted chocolate chips. Seriously, you should try it!
My toddler asked for an apple cake, so we used this recipe and a snack cup of apple bites to make her an apple mug cake. We used the apple juice instead of milk and apple bits (food processed) instead of apple sauce and chocolate chips. It was so good!! I hope you try it
This was delicious….but I got a way different nutritional summary when I put it in MFP. Are you sure about these numbers?
Can I just say that this recipe is FANTASTIC! I’ve been using it for a long time now and I’ve used pumpkin purée and mashed banana in place of the applesauce when I didn’t have it in my fridge and they have all turned out so good! Applesauce is the best, then banana and then pumpkin 🙂
Hi Katie! Just had to comment–my husband and I love this cake! I make it at least once a week. Last night I thought about one of my favorite cookie recipes (from Keepin It Kind–a chai chocolate chip cookie). I thought, what if I made this cake into a chai chocolate chip cake!?!? So I opened up a chai tea bag, dumped it in and put about 1/4-1/2 tsp of cinnamon in the cake. Oh my goodness. AMAZING!! If you like chai, I’d highly recommend!! Thanks for all your recipes!!
Your recipes get me so excited but them I plug the ingredients into my loseit app to get the calories and usually get about double the calories you claim. This one is more than double even with the minimum amount of chocolate chips.
I’m getting close to what Katie posted. What specific ingredients are you plugging in? Be sure to remember that optional ingredients are never included in nutrition labels unless specifically specified!
These were so good!!!! I didn’t have any applesauce so I used 2 tsp of Canola Oil (I know, I know, not healthy!!!) and a smide of apple cider vinegar to give it a little buttery flavor. And muah. Delicious Thanks!!!!
Also works if you substitute greek yogurt for the applesauce! Absolutely delicious.
“This looks amazing.” That’s about the most misleading review I have ever read. Rate a recipe after you make it! I did. The microwave version of this recipe s a complete and utter flop. Into the garage it went. Tastes like raw dough.
I’m not sure if you just didn’t see that there are more than one page of comments, but there are a lot of reviews on here from people who have actually made the recipe if you go to page 2 and beyond of comments. If yours was raw dough, just cook it longer next time, as microwave cook times vary greatly by wattage. -Jason
i’m a little late, but this recipe is fantastic! i didn’t have applesauce, so i subbed a flax egg (1 tbsp of flax and 3 tbsp of water). i also reduced the sugar. i just use white sugar, but i don’t like very sweet things so i actually just added 1 tbsp total of white sugar and no other sweeteners. i might use 1.5 tbsp next time and see if it’s even better, but with the chocolate chips in it, i found this to be a pretty good level of sweetness (more like a muffin!) i also topped mine with peanut butter and cinnamon.
