Spinach Ice Cream??

Spinach Ice Cream?

The spinach will be our little secret; I swear you cannot taste it at all!

Spinach Ice Cream https://lett-trim.today/2011/03/13/spinach-ice-cream/

It’s an ice-cream version of a recipe posted a few weeks ago.

This recipe: Mint-Chocolate Milkshake.

(That shake is one of my fave recipes on the whole blog!)

mint ice cream

Finally the weather’s getting warmer. When I discovered that the temperature was a perfect 74 degrees, I decided to celebrate: with ice cream. Taking advantage of the waning spring-break hours, I invited two friends over to eat ice cream on the patio.

Yes, I really did serve spinach ice cream. And yes, my friends really did eat it all up! I honestly don’t even know why they allow me to feed them anymore, for how many times I’ve snuck funny things into their food—tofu chocolate mousse, spinach ice cream, kale milkshakes…My friends laughed when I told them the truth (after they finished eating). Then they requested more. (For theirs, I replaced the cacao nibs with regular chocolate chips. I know not everyone shares my love of those bitter little crunchies.)

Spinach Ice Cream

(sugar-free)

One of my Raw Dessert Recipes.

  • 2 frozen bananas, as ripe as possible
  • 2-3 drops pure peppermint extract
  • scant 1/16th tsp salt
  • 1/4 cup or more frozen spinach (I used 40g) (If you don’t like spinach, you can sub food coloring or omit completely.)
  • scant 2 tbsp milk of choice (I used almond milk)
  • chocolate chips or cacao nibs

Blend everything together in the Vita-Mix. (If you don’t have a high-powered blender, just add more liquid; it won’t be as ice-cream-like, but it’ll still taste good!) Use an ice-cream scoop for authentic-looking ice cream.

Not a fan of spinach?

If you prefer, try this recipe for real Healthy Mint-Chip Ice Cream.

(The above link is also much healthier than traditional mint-chocolate chip ice cream… but it doesn’t have spinach! So check that one out if you still don’t trust me about spinach ice cream!)

stir fry

After my friends left, I continued the St. Patrick’s Day theme (and the leafy-green theme) with dinner. It’s just a simple stir-fry over bulgur. But the mache greens look like four-leaf clovers! I also ate a spoonful of raw cashew butter, straight-up. Anyone else like eating nut butters straight-up?

How do you get your daily servings of leafy greens?

And thanks for all the feedback about My FAQ Page.

I really appreciate it!

After the luck I had with your mint choc chip milkshake, I’m sure this is delicious!! You really can’t taste the spinach at all – the peppermint flavor is so strong. I eat nut butter straight up all the time – usually after a really tough workout, I crave it!

  2. Aisha says:

Katie, this looks so great; I’ve tried the banana “soft serve” before and aways wondered if it would work with spinach added in–one question, do you think it would taste the same if I used fresh spinach instead of frozen?
Love your blog and your creativity!

    1. Chocolate-Covered Katie says:

It will work just as well!! I just use frozen because it makes the smoothie colder. But I’ve done fresh before. It’s good with peaches too, although you might have to add a little sweetener.

Those little four-leaf greens are so freaking cute! I love this idea for some St. Patrick’s Day dessert.

I sneak things into my friends’ food too. Tofu’s a favorite, Example, vodka penne: “What do you mean that wasn’t cream? You fed me tofu? Well I never.” Sometimes it’s best not to tell them until they’ve finished, good call.

  4. Alexa @ SimpleEats says:

Spinach in smoothies is the best way to get those greens in every day for me…I wouldn’t mind it in this ice cream, though!

  5. Renée says:

    YUM, making that asap.
I’m also about to attempt the skinny fudge babies, I shall report back soon to let you know how they turn out!

    Or:
    Chocolate PB Banana Shake

-1 tbsp sweetener (agave, honey, sugar etc.)

    -1 serving silken tofu

    -1/2 cup ice

As always, you can add: coconut butter or coconut flakes, vegan chocolate chips, peanuts, and marshmallows

Btw, made a milkshake of yours yesterday. It was very good 🙂

I love green smoothies to get in spinach! I also use it daily in my lunch for wraps/sandwiches or a salad here or there. I love salad but hate making them. They never taste as good at home!

This looks fabulous! I would never think to add the mint extract. Great thinking as always, Katie!

I used to make spinach pina colada popsicles for my kids when they were little

    My comment cut off… strange…

I love that you called this chocolate MINT so no one would think twice about the spinach.

I’ve been hesitant to try it with banana… because I can’t imagine the two flavors together.. but I’ll try just about anything!

  15. Rande @ The Vegetable Centric Kitchen says:

Wow, you really crank them out don’t you?? I’ve been subscribed to your blog for a couple of weeks and the deliciousness just keeps coming, this looks wonderful!

If only there were more hours in the day! I feel like they keep piling up on me. I think up new recipes way faster than I can write posts for them all :-?.

That looks good. It is a little richer in color then mint icecream but it looks tastier. My favorite way to eat my greens is in stir-fries. I also like to make kale chips.
