No-Bake Strawberry Cheesecake Ball

I was both very lucky and very unlucky during last year’s Super Bowl.

The night started out well; I made brownies and a peanut butter chocolate chip cheesecake ball, and both fortunately survived the train commute to the party intact. I also won the grand prize of $83 in the Super Bowl square grid game (where everyone picks random squares, then numbers are filled in later to correlate with the score).

Money in one hand, empty dishes from the brownies and cheesecake ball in the other, I headed out the door. It wasn’t until after midnight that I arrived home and realized my purse—keys included—was sitting back at my friend’s apartment.

The peanut butter cheesecake ball and Chocolate Brownie Cheesecake Ball version I made a few months later were so popular with readers that I was excited to try out even more variations. My first experiment—a pumpkin version—unfortunately never set correctly. This strawberry cream cheese version fared much better.

It tastes like eating a slice of crustless strawberry cheesecake and is great for bringing to parties. Serve with graham crackers or fresh fruit, or layer it in between sliced bananas or apples.

Strawberry Cheesecake Ball

Adapted from: Chocolate Chip Peanut Butter Cheesecake Ball

  • 8 oz strawberry cream cheese, such as Daiya
  • 1/4 cup melted coconut butter OR raw cashew butter (60g)
  • 2 cups powdered sugar or Sugar-Free Powdered Sugar (300g)
  • 1/2 tsp pure vanilla extract
  • optional 1/2 cup mini chocolate chips

Warm the cream cheese until it is very easy to stir. Make sure your coconut butter is warmed until easily stir-able as well. (In general, if you ever have trouble with coconut butter that just will not become smooth, simply add some melted coconut oil to the butter and stir until smooth.) Mix the cream cheese and coconut butter together then add the vanilla extract and 1/2 cup of the powdered sugar. It will seem very dry, but just keep stirring until all of the powdered sugar is absorbed. Then add another 1/2 cup powdered sugar, stir until absorbed, and repeat with the rest of the powdered sugar. Each time, it will seem dry at first but will eventually become a smooth batter again. Spoon the mixture onto a large sheet of plastic wrap, then bring up the sides of the wrap and twist very tightly. It doesn’t need to look like a perfect ball yet. Freeze in the coldest part of your freezer 2-3 hours or until firm enough to mold into a ball shape and remove the plastic wrap without the ball falling apart. If using chocolate chips, place them in a large bowl and roll the ball around. Freeze until ready to serve, or refrigerate if serving the next day.

    In my early 20’s I was living at my brother’s house out in the country. One morning I went out into the garage to feed the bunny. When I went to get back into the house it was locked. Middle of winter, 2″ of fresh snow on the ground and me in my t-shirt, jammy pants and Homer Simpson slippers. I walked the 1/4 mile to the neighbors farm (all bachelors) because I knew they used to look in on the old man that lived in the house before my brother bought it. Thankfully, they knew where the spare key was hid. I was so grateful yet mortified at the same time. They kept saying, “We have a damsel in distress, boys!” Just kill me now…

    I’ve locked my keys in my car a time or two…Now that I have a chip key though, I do keep a spare that can only open the doors hidden on the outside of my car. No more having to have somebody drive me the spares!

    That was a shame about the purse, but thankfully you had left it behind at your friend’s and not lost it entirely, puh!
    I remember one time, I had forgotten my keys, and my flatmate was away and so I sat on the staircase outside for two hours. Then, my upstairs neighbour who I hadn’t met before came walking up towards the entrance, with a bottle of wine in hand, and she asked if I wanted to come in and have some with her instead of being locked out. I love when you randomly make friends like that ^ ^

    The first winter I lived in my apartment, my now-husband and I went out with some of his grad school friends. We rarely “go out” or stay out late, but on this particular night we had stayed out until 1:30 AM. This night also happened to correspond with the beginning of a MASSIVE snow storm. We get back to the apartment to discover my keys won’t work – the door to the building simply won’t open. Keep in mind it is freezing and blizzarding around us. I had to call my complex’s emergency number and the manager showed up at 2 am in her pjs, boots, and a floor length coat to confirm her keys wouldn’t work either. She then calls the on site maintenance, who shows up in a snow plow (!!!) and has to literally break down the door to get us in the building. I have never been so happy to get into a warm bed in my life!!!!!

    When I was younger, we locked ourselves out of our Astro van. I was the smallest of the group and had to squeeze into the tiny sliding back side window. Not fun! Question, what does the coconut oil do? Serve as a binder?

      Coconut butter, not oil. This is important. And yes, it will give the recipe thickness and bind it together.

    I was wondering, have you every tried to make copycat Amy’s vegan chili?
