You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

Their fatness rivals my Blueberry Pie Pancakes.
And I didn’t try to shape the one above into a heart; it just happened to fall that way!

Hi Katie. I love these pancakes! Question: everytime I have made them they seems to be a bit gooey and underdone. Yet they are burning on the top. Any tips for me? Thanks 🙂
Make them smaller, and flatten a bit?
Do you think you could put these in a waffle iron and they would still come out…you know….like a waffle?
I think another commenter tried and said it worked but they just stuck a little. So maybe grease the iron well? And report back! 🙂
It definitely works; I tried this a while back because I love waffles! You may need to cook them longer than usual because when the indicator light came on they definitely weren’t done yet (it seemed like the extra moisture in the strawberries kept it a bit gooey), but be patient and they should turn out! 🙂
I just made these strawberry shortcake pancakes today. Wow! They were surprisingly delicious for something so healthy. Although I did have to add more flour because the batter was too liquidy and add more sugar because they weren’t sweet enough with just the stevia. Thank u Katie!
Btw was this recipe made for one serving or two?
single-serving.
Just gotta say, I made these this morning, and they were to die for! Topped them with your strawberry glaze recipe (SO easy!!) from your pop tart recipe, with the leftover strawberries, and whipped cream! SO delish! Will definitely be making again! You are the best Katie!!

(Just realized I forgot to fill in my info. Wanted to let you know that I’m a real person, not just “anonymous”!
Thank you so much for this amazing recipe! I am a huge pancake fan and have always strived to create healthier versions of the popular breakfast food. Nothing beats fresh strawberries, pancakes (in shortcake form) and a yummy filling! I followed the recipe except added some vanilla protein powder/nonfat cottage cheese for a bit more texture. I made the filling from nonfat Chobani yogurt, chia seeds, vanilla creme stevia and a splash of unsweetened almond milk. I was in heaven!!! This is my new favorite, and again, thank you :)!
Hi Katie! I calculated this recipie with having 263 calories 2.6 grams of fat using sugar and Unsweetened Vanilla Almond Milk. Also, without the coconut oil. 🙂
Okay girl, second recipe tried! Oh, and guess what, I Love Them!!! On to the next one.
