You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

Their fatness rivals my Blueberry Pie Pancakes.
And I didn’t try to shape the one above into a heart; it just happened to fall that way!

holy yummm! I just made these and I basically die and went to heaven! I have to admit, I doubled the recipe – I am one hungry girl 🙂 and might have consumed a little coconut butter along with. SO GOOD, thanks Katie!
Oh wow, I am so so excited you already made them!!!
Strawberry shortcakes must be in the air…I made a strawberry trifle this weekend that was to die for with angel food cake and dairy free pastry cream! YUM! Your pancakes look amazing! I love thick doughy pancakes. Smother them in any kind of luscious topping and I’m sold!
I adore pancakes but I usually eat them for supper instead of breakfast because they don’t leave me feeling very full!
Wow, I need to find an occasion to make these! They look so fun, and I am sure they taste GREAT!
Aw, I need to get some strawberries!
Um Katie, I have mentioned I love you right? Only about 100 times? Well, make the 101 😉 I already had breakfast, but I’m dying for these pancakes!! Solution: pancakes for lunch 😀
And comment for your last post: I eat three pretty large meals a day and sometimes an afternoon snack. I know that I eat quite a bit (way more than my friends), but I know how active I am and that I need to eat a lot. And I feel great about it because I know that what I’m putting into my body is good for it! 🙂 Awesome post!

Oh and if you do make the brownies with pumpkin (or even without), you should try this! Once you spread the batter in the pan, sprinkle chocolate chips on top. After they come out, spread them around. Once they cool, they have a delicious crunchy top! You could even sprinkle some sprinkles on them before the chocolate hardens (gosh, I really want to try that now!! 🙂 )!
Eating these right now and oh. my. goodness. BEST. PANCAKES. EVER!!! And a million times better than really strawberry shortcake. For real! I want to reach out of the screen and give you a big hug for creating this AMAZING recipe!! 😀
And I topped mine with coconut butter. ‘Nuff said 😉
You are incredible! So excited you tried them already!!
P.S. Your Greece photos look beautiful, as do you :).
Oh, how lovely and summery those look! They would have been perfect to eat while watching Wimbledon!! 🙂
Those pancakes look sooo thick and yummy! I hope I can make mine look just like yours 😉 And the hot fudge oatmeal…that’s genius!
Fat Pancakes?! YUM!! I wish I had strawberries right now.
I love pancakes, but I very rarely make them! I haven’t made them at all since sticking to a GF diet, even though I have a bag of Bob’s GF pancake mix in my cupboard! Fail. Usually I would prefer either bananas or blueberries in my pancakes, but these strawberry pancakes are making me rethink those preferences! I think it’s the perfectly piled stack that makes them look so damn amazing.
