Strawberry Shortcake Pancakes – Sweet homemade & fluffy pancakes, bursting with fresh strawberries in every bite!

You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

And I didn’t try to shape the one above into a heart; it just happened to fall that way!

Ingredients
- 1/2 cup chopped strawberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats, gf if desired
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or pinch stevia
- 1/3 cup milk of choice
- 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes)
Instructions
Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.
Or top with fresh berries and Homemade Healthy Whipped Cream.

LOVE pancakes……I’m even making some for dinner tonight! Know what? We should have a “pancake day” where you make pancakes for breakfast lunch and dinner….or better yet-a pancake week where you eat a different flavored pancake for every meal….maybe I’ve gone a bit overboard….
eh, I’m not a huge fan of pancakes, but if the craving strikes they can’t be beat! I’ve never tried strawberries in my pancakes! I’ve had them as a topping, but I think they would taste even better cooked right in. or maybe with banana too for strawberry banana pancakes! Oh that would be fabulous!

These pancakes are ridiculicious = ridiculously delicious: I’ve had to come up with a new neologism, as I thought your Blueberry Pie Pancakes were out of this world, but it turns out that these are even better and “yumlicious” just won’t do any more! I just had this for breakfast and it was really good! I topped the pancakes with some cottage cheese and more strawberries. One of the pancakes, I put on some of the gooey brownie (that I made last night from your brownie recipe) and it was awesome!

I made these today and they were SO yum! I actually think adding that 1/8th of a tsp of salt makes a difference because the had a really nice flavour! I topped mine with some fresh thinly sliced pear and a sprinkle of cinnamon. Thanks for the recipe!

Don’t hate me…I’m so not a pancake person. Waffles are okay. But French toast is my true breakfast love…when I have time for what I would deem a fancy breakfast. Mmmm, French toast. But your pancakes do look delicious – if you cooked me some, I’d definitely enjoy them.
