Strawberry Shortcake Pancakes – Sweet homemade & fluffy pancakes, bursting with fresh strawberries in every bite!

You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

Ingredients
- 1/2 cup chopped strawberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats, gf if desired
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or pinch stevia
- 1/3 cup milk of choice
- 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes)
Instructions
Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.
Or top with fresh berries and Homemade Healthy Whipped Cream.

Wow, these look awesome! Unfortunately, the strawberries at my primary grocery store seem to have gone AWOL since summer began (??) Maybe I could use biwa instead (called “Lorquat” in English, apparently). With yuzu zest. It’ll be a Japanese-flavored bonanza.
OH. I bought an ice cream maker yesterday. Just so I could make your awesome ice creams (or try to). My blender is weaksauce and I really wanted to see if they could work in an ice cream maker instead =D. I’ll let you know how they turn out!
love this recipe dear!! i’ve been trying to make pancakes lately for our weekend brunches (my fiance just LOVES waffles..even though its basically the same..dont ask lol i dont even understand!) but i think these will definitely be happening this weekend since i’ll be with my girlfriends instead! 🙂

I’m usually not a big pancake fan, I find them kind of boring, but I think this could be the recipe that changes that for me! I love strawberries…will definitely be making this soon

I love how they are thick and not some little flimsy pancake. I am always so impressed with your pancake cooking skills b/c I can never seem to get the batter consistency down pat or the cooking. They either burn on the outside and are raw in the middle or they are too thin and dont hold up in the flipping process.
After my move and when I get my kitchen functional again, I must try these!
