You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

Their fatness rivals my Blueberry Pie Pancakes.
And I didn’t try to shape the one above into a heart; it just happened to fall that way!

wow i love this!
They look so pretty Katie! Can’t wait to try them 🙂
I like chocolate chip pancakes best! Or maybe blueberries. Or just plain. It’s all good! 😉
How delicious! I had some blueberry muffin pancakes this weekend, I love how quick and simple they are! My boyfriend hates pancakes but I was able to whip myself up a batch in the time it took him to toast a bagel and pour cereal. Plus single-serve means no waste!! Love it.
Holy moly, these look SO good. I’d probably plop some PB on top, too 🙂
LOVE pancakes……I’m even making some for dinner tonight! Know what? We should have a “pancake day” where you make pancakes for breakfast lunch and dinner….or better yet-a pancake week where you eat a different flavored pancake for every meal….maybe I’ve gone a bit overboard….
eh, I’m not a huge fan of pancakes, but if the craving strikes they can’t be beat! I’ve never tried strawberries in my pancakes! I’ve had them as a topping, but I think they would taste even better cooked right in. or maybe with banana too for strawberry banana pancakes! Oh that would be fabulous!
OMG these look so thick and doughy! And I have been craving some strawberry shortcake like a mad woman! Must make these next time I am wanting some pancakes…..which is LIKE NOW!
these are the cutest things ever! strawberry shortcake is my fav…and in pancakes…um could there be a better combo??!
Maybe if you added chocolate chips 😉
I’m a huge fan of strawberry + coconut, so I might make these with a little drizzle of coconut butter:)
Hi Katie,
