You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

Ingredients
- 1/2 cup chopped strawberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats, gf if desired
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or pinch stevia
- 1/3 cup milk of choice
- 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes)
Instructions
Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.
Or top with fresh berries and Homemade Healthy Whipped Cream.

Can you make these with just quaker oats? I don’t have any rolled oats and im dying to make these!!
Quaker oats ARE rolled oats ;).
So yes, definitely you can use those!
My tummy is a very, very happy tummy, Katie! I just polished off my plate of these beauties (topped with a few dark chocolate chips, of course)! I left out the oil and didn’t miss a thing. They were just perfect as is, and so filling. Absolutely perfect for my pancake Sunday! I even added a little cinnamon (I just can’t stop adding it to things lately).
I’m sure you’ve thought of/tried this, but I make these as chocolate-covered-strawberry pancakes by subbing cocoa for the rolled oats. Light, fluffy, sweet, and SO happifying!

omg just had these for breakfast and let me tell you firsthand…they were delicious! i multiplied the recipe by three so that the rest of my family could have some too..they couldn’t believe that this didn’t have any egg or butter in them! they tasted sooo good<3 i was a little worried at first because the batter wasnt as liquidy as pancake batter usually is.. they don't taste like your normal brunch place pancakes but they still taste amazing! it's a small price to pay for such a delicicious but low fat pancake~
i made mine with whole wheat flour and i had to stop myself after three hehe 😉 i probably could have eaten the whole batch! i had a little maple syrup on the side and yummm..i can't wait to make them again!
I’m planning on making these for valentines day breakfast! …..I’m actually between this and your apple pie pancakes…Help me decide? Also- What is the whipped topping in the photos? If I made these I would want to have some sort of whipped topping for sure and regular whipped cream is not an option (that stuff is so gross to me)….loving your recipes!

So i just made these and they are DELICIOUS!!! I have to say I haven’t ever baked with coconut oil before and mine came in solid form, am I supposed to warm it up first to make it liquid or leave it a solid?

I think it’s the coconut oil that does it for me. I like coconut *almost* as much as chocolate. (The oil doesn’t really make them taste like coconut… but still, I love it.)
I absolutely love love LOVE your recipes!! So perfect for me in the am when I want something indulgent, yet low in calories and quick.. YET- SOOO YUMMY!
My only problem (if, you can even call it that) is that I always have problems with your pancakes 🙁 I don’t know what I’m possibly doing wrong, but mine always turn out so eensyweensy compared to the pictures of yours. I’m planning on making the strawberry shortcake pancakes for my boyfriend’s birthday brekky, and I fear I will have the same problem, and want to double the recipe! Defeating the whole purpose of the low calorie end I enjoy so much 🙁 what did you use to measure these pancakes!? In specific, as in cups or!?
I used cups… but you can EASILY double the recipe! It definitely works well doubled 🙂

I made these for Easter breakfast this morning, and I omitted the strawberries for half the recipe (added them in after half the batch was cooked so that there would be options for the family). Even the ones without strawberries were tasty! Thanks for all your great recipes. I’ve tried several and they’re all great!
Just made these delicious morning treats but sub flax meal for oats, used half raspberry/strawberries!! WoW! the raspberries created a fragrance and taste that I have never had in pancakes before! Great recipe – please try with raspberries too!
