Strawberry Smoothie Pops
(soy and gluten-free!)
- 1/2 cup sliced pineapple or mango (or banana) (60g)
- 1/2 cup sliced strawberries (80g)
- 1/3 cup raw kale or spinach (omit if desired) (15g)
- 1/4 cup milk or yogurt of choice (60g)
- 1/4 tsp cinnamon
- 1/2 tsp pure vanilla extract
- sweetener of choice, to taste (amount will depend on your tastebuds and also on what type of milk you use. Remember that the frozen product will be much less sweet. Try 1-2 stevia packets or 1-2 tbsp of a sweetener like pure maple syrup.)
Combine everything in a blender, food processor, or Magic Bullet until super-smooth. Pour into popsicle molds or paper cups, and insert spoons or popsicle sticks. Enjoy!

Are you watching the Olympics?
I’ve mostly been watching the swimming, diving, and gymnastics, since that’s all they seem to show during prime time tv. The gymnastics floor routine has been one of my favorite Summer Olympic events ever since I watched Dominique Moceanu back in 1996. I don’t like the balance beam, though, as I’m always afraid they’re going to fall off. I can’t even walk on that thing, and these girls are doing flips! Link of the Day:
Apparently it’s National “Brownies at Brunch” Day. Not sure why you’re only supposed to eat them at brunch… Who makes up these days, anyway?
















Only thing I care about is the Gymnastics! My favorite is the uneven bars. It is crazy how they flip around like that. I remember trying to even jump up onto the lower bar when I was little and I couldnt even do that! lol. So dissapointing that Jordan couldnt compete in the All Around competition. That is crap.
Anyway, these popsicles look yummy and I bet my kids would even eat them 🙂 I will have to make these today!

I love the girls gymnastics! I am the same way though. I have to shut my eyes through most of the balance beam routines. I get so nervous for them!!
I used to LOVE making smoothie popsicles! And I haven’t been watching, I don’t have a TV and when I try to watch online streaming it keeps cutting out. So frustrating!
These look so refreshing! I’ll have to give them a try soon. I love watching the olympics. So far my favorite events have been beach volleyball, swimming and synchro diving. Go team USA!

SO… I’m getting really good at this whole CCK diet thang.
For example I have a new fave for breakfast. Enter: Vanilla chai breakfast shake topped with two scoops (yes, TWO) of oatmeal cookie ice cream.
And this is being typed with one finger because the other is in the food processor bowl which just happens to be full of Brownie Batter Dip.
Gotta go Katie- I need to clean this bowl up so I can start making the Cake batter dip next.

Funny, that’s all they’re showing where I live, too (swimming, gymnastics, diving, and volleyball). I do love those sports, though! I just wish that I could see the Equestrian sports. I love horses! I saw on the replays that Germany won show jumping, but I’m hoping that I’ll be able to see dressage or cross-country jumping at least :-/

I only watched a bit of the Olympics last night, however I have been cutting back my TV so I have not watched very much. The part I watched was the Balance Beam (US and Russia) and I feared the same thing but the girls did such a wonderful job.
Another comment from me about what you could sub for strawberries in this… (yes, I do ask this a lot. Life would be much easier if I could just eat the darn things…)

Katie – Totally off topic, but I’ve had a vita-mix on my Christmas list for a while. Then I got my Consumer Reports in the mail today and it was reviewing blenders. Woot! I thought I’d share that although Vita-mix was the top scorer, the Ninja Master Prep Prof QB1004 was only 3 points lower (looked like it had a very good instead of excellent for puree/grate – otherwise the same or better than vita-mix – better on noise…) and Ninja was rated a best buy b/c it was just $60 to the vita-mix $450. Hmmm. Thought it was interesting and just wanted to pass that along in case you were curious! As always, loving the recipes. Whenever I make something the kids say: oh, is that from chocolate covered katie? 🙂

I love this…but I wanted to warn you about the new WW pointsplus system. When you destroy the fiber content of a fruit (like blending it), it is No Longer 0 points plus. In this case, you would need to place all ingredients into the recipe builder to determine the proper points on this. I would figure it out for you, but I don’t have the amount of pops it makes.
Hey there. I just wanted let you know that blending does not destroy the fiber; it just chops it up. As long as you are eating or drinking something made with the whole fruit, you are getting the fiber. WW gives Points Plus values to fruit when used in recipes because you are more likely to over-eat when you are not chomping into a piece of fruit. Since overeating anything (even the good stuff) isn’t good for you, WW makes them count.
Now, if you use or drink fruit juice, you are missing the fiber that would help you to feel full. That’s why WW gives PPV to juice.
Omg these smoothie pops are so cute and they look so delicious! I love that you can just make them in paper cups too- that makes them so easy! I’m going to blend some of these up to have on hand as they would be perfect to grab on the go- what a great idea!
When I used the WW online Recipe Builder and put in the ingredients listed with a serving size of 4 (as in you make 4 pops from this recipe)…it gave me a value of 1pts+ per pop. It is what it is. I don’t agree with it all the time, but it is still better than the old system and it encourages to eat more healthy and make healthier choices. I don’t always agree, and like Donelle, I use my best judgement. I happen to love WW for the simple fact that I do choose the banana over the cookie now (where at one point, I wouldn’t).
