The Definition of Carbo Loading


Carbo Loading:

(verb) To consume large amounts of carbohydrates through food intake.

Above: spiralized zucchini noodles with my homemade Alfredo sauce, veggies similar to the ones from Thanksgiving, and two toasted whole-wheat English Muffins with jam. Two muffins are better than one ;).

Speaking of carbs… I’m finally getting around to posting the recipe for that oat milk! Here she be:

CCK’s Oat Milk

Ingredients:
3 and 1/2 cups super-hot water
1 cup rolled oats

Optional: vanilla extract, sweetener, salt

In a lidded container, combine all ingredients, cover, and refrigerate. After a few hours (or a day), blend until smooth.  (Edit: a reader left the suggestion of grinding the oats in a coffee grinder first if you want a smoother consistency.)

    I love carbs too; they’re my waistline’s downfall – even though I don’t eat refined ones.

    You’re giving away a VitaMix? For realz? Cool.

    My week is more of the same, cleaning, job-hunting, going slowly insane (some would argue this is already accomplished), and learning to drive stick shift to facilitate speedier job-hunting and gym-visiting. 🙂

    I am looking forward to more of those zucchini noodles and alfredo sauce myself! AND, I just wrote myself a reminder note to make some fudge babies tomorrow. I’ll let you know when I make them, I just have to decide which ones to try first…

    Oh, and I disagree about vacation. A lifelong vacation sounds great to this student! 😉

    The past few days for me have been carb-loving ones. I crave toast whenever I catch a cold, and I’m getting over one now.

    We don’t have any big plans this week, but I am excited to cook a lot of delicious and new meals this week – we’re trying out lots of new recipes!

    YUM for carbo loading! I’ll be doing some of that tonight, I’m making lasagne and garlic bread. And a big green salad, but we know where my heart lies.

    This week I’ve got the usual: writing, reading, lecturing, lots of time with horses and dogs, working out, AND celebrating my 5 year anniversary with Cody. 🙂

    Carbs are the best thing in the world for our bodies… 80% carbs from fruits & vegetables, 10% protein, 10% fat. Sounds perfect to me 🙂
