The Definition of Carbo Loading


Carbo Loading:

(verb) To consume large amounts of carbohydrates through food intake.

Above: spiralized zucchini noodles with my homemade Alfredo sauce, veggies similar to the ones from Thanksgiving, and two toasted whole-wheat English Muffins with jam. Two muffins are better than one ;).

Speaking of carbs… I’m finally getting around to posting the recipe for that oat milk! Here she be:

CCK’s Oat Milk

Ingredients:
3 and 1/2 cups super-hot water
1 cup rolled oats

Optional: vanilla extract, sweetener, salt

In a lidded container, combine all ingredients, cover, and refrigerate. After a few hours (or a day), blend until smooth.  (Edit: a reader left the suggestion of grinding the oats in a coffee grinder first if you want a smoother consistency.)

    I’ve been following your blog for a while but this is my first comment- your meal looks delicious! I am so excited to find someone who shares my love of chocolate and oatmeal and has the time to make delicious concoctions. I am a working mama so I don’t have much time. We are also back to school- but I am the teacher. Teachers dislike going back to school just as much as the students!

    Carbo loading…yum 🙂 I am increasing my carb intake slightly because of my increase in running in addition to my normal cardio. I am studying this week for the ACE personal trainer test, taking kids to doctors and school, cooking and blogging 😉 I have a crazy, busy week ahead 🙂 LOVE busy weeks!     This weekend was a carb-luvin one. 🙂 Much love to the carbs, for sure. This week, my son goes back to school – they had an extra week’s vacation because our new school is built and we’ve been moving things for 3 weeks! I’m looking forward to this week because we’re supposed to have a heat wave (aka 34 degree highs) until Friday!!! It’s been well under zero for the past week and a half, so I’m excited to not have to wear 10 layers just to take the trash out!!!

    MMm. That Alfredo is a must try.
    I’m completely head over heals in love with my spirilizer! I make beet noodles and carrot noodles and tofu noodles and….you get the point, but that Alfredo sauce looks so much simpler to make than the recipes I have and it doesn’t have soy! Hallelujah! Im honestly eating way too much soy at the moment.

    My week is more of the same, cleaning, job-hunting, going slowly insane (some would argue this is already accomplished), and learning to drive stick shift to facilitate speedier job-hunting and gym-visiting. 🙂
