I really don’t like any green things!! I hated when they came up with green ketchup… it grossed me out!! I wil wear green though maybe!

    1. Chocolate-Covered Katie says:

Oh my gosh, me too! And purple ketchup too. Bad, bad idea!

  2. Kate (What Kate is Cooking) says:

I want to incorporate green into all my meals! Perfect way to use up all my spinach 🙂

  3. J says:

Happy Saint Patrick’s Day! I just wanted to say thank you for your response to my comment/question yesterday. I really appreciate your time and advice. Also, you’ve put me so in the mood for something green and minty. Still deciding what to make tomorrow although I did make shamrock shaped granola bars to share after yoga class today. Coconut, chocolate, banana, yummm!

  4. A.Cook says:

You can never go wrong with mint chocolate, in my opinion. The grasshopper pie looks outrageously good! Unfortunately I probably won’t have any time to cook anything tomorrow, so it might be that the only green I eat will appear in salad veggies. Still delicious! And I’m definitely wearing a green shirt!

  5. J3nn (Jenn's Menu and Lifestyle Blog) says:

I agree, mint chocolate should be a food group! It’s been my favorite since I was little and we owned an ice cream stand. My parents made fresh gelato every day!

I’ll probably eat so ethibg green on st. Patrick’s, just for fun. Hehe

  6. Caitlin (EatFeats) says:

Mint chocolate chip was also my favorite when I was a child! My mom and I usually bake a ton of Irish Soda Bread for Saint Patrick’s Day. I also wear a lot of green, but that has the sort of unfortunate effect of making me look like a Really Tall Leprechaun.

  7. Mali K (The Mali K Whey) says:

I fixed my blender and whipped up a batch of Coconut Butter so that I can make some of your lovely coconutty recipes, only to discover I’m seemingly allergic to coconut! No Melties for me 🙁

On the plus side, mint and chocolate do not pose a problem! So I think the thin-mint Brownies are next on the list (and for the record, I think they look beautiful!)

    1. Chocolate-Covered Katie says:

Well, as long as you can have chocolate! 😉
      Happy green day, Mali!

  8. Alex@Spoonful of Sugar Free says:

I totally agree with you, Katie. Chocolate mint should be it’s own food group.

  9. A Tablespoon of Liz says:

At the bakery I work at almost all of our cakes decorated for St. Patricks day are mint chocolate chip! Your recipes look much better than the cake slathered in buttery frosting we make though, haha.

  10. kaila @ healthy helper! says:

I cant wait to make ALL of these! Mint Chocolate Chip is my favorite food group too….I thought I was the only one! YAY for mint and chocolate coming together to make the best combo ever!

  11. Stacey (The Home-Cooked Vegan) says:

I try to eat something green everyday! My stepdad calls me a rabbit, because all I eat are “twigs and trees” 😀 Loving all of this green food, except the spinach ice cream scares me a little!
Maybe I’ll start off with the baked oatmeal and go from there 😉 And I have yet to make the red velvet pancakes either! Slow down, woman! Hehe

    1. Chocolate-Covered Katie says:

lol I feel like I’m going TOO slowly! I have too many recipes and not enough time to write posts for them all :-?.

  12. bitt of raw says:

I wear green all the time and my coat is green so i feel safe. It used to be a big deal when I taught so I’d give all the kids a green sticker to be safe from pinching. Trader Joes always delivered with the freebie stickers.

  13. chelsey @ clean eating chelsey says:

I’m going to eat some lettuce! 🙂

  14. Gen says:

Wow! I now am craving green food in a major way! 😀

  15. Disturbed says:

My challenge for St. Patrick’s Day is to try something-anything-of your recipes.
Any ones that you think are a must?

    1. Chocolate-Covered Katie says:

The chocolate fudge! Especially the raspberry one… but that’s one exactly St. Patrick’s Day-y. So… well anything with chocolate ;).

      1. Disturbed says:

I will look at it 🙂

  16. Alyson says:

My original goal was to eat all green food for St. Patty’s Day, but somehow I’m not sure how that will work out unless I go shopping and buy lots of kale, spinach, bananas, and lots of green food coloring? Hahahaha. I guess I’ll just stick to at least 2 green meals and see how that goes. 🙂 I definitely plan to make a minty shake though. 🙂 Hopefully raw, but if not, I’ll make it as close as possible. 🙂

    Happy Green Day tomorrow! 😀
