Cauliflower Burgers – 6 Ingredients

A few weeks ago in an interview, I was asked what food trends I thought would be big in 2019.

The first thing that came to my mind was cauliflower.

Who could forget this surprisingly delicious Cauliflower Chocolate Cake??

Food trends come and go, but cauliflower has staying power because it lives up to the hype – it’s an astoundingly versatile ingredient you can use in so many different ways, and I’ve been posting unusual cauliflower recipes, such as Panda Express Orange Cauliflower or cauliflower mashed potatoes, since all the way back in 2008!

I’m not even going to link to those because they’re such embarrassingly old posts! But both recipes exist if you truly want to find them on my blog.

The internet never forgets.

Despite what some media outlets are reporting, cauliflower is still going to be a big food trend for 2019 and beyond.

For the record, my other food-trend predictions for this year include: CBD, mushrooms (especially creatively, such as with chocolate), anything keto (hi Keto Ice Cream!), oat milk–here’s How To Make Oat Milk, and plant-based meat alternatives.

Plant-based meat is going to be huge in the next few years. Even companies such as Tyson Foods have started to take notice and invest!

But going back to these cauliflower veggie burgers…

They are easy to make, delicious and filling, and completely plant-based. And since—as even their appearance proves—they’re clearly not trying to masquerade as a beef substitute, both vegans and meat-eaters can enjoy the burgers in their own right, not in comparison to something else.

I chose to serve mine on buns with all the burger fixings, but they are just as good without the buns if you want to serve them as patties, perhaps with gravy or a side of Vegan Mac And Cheese???

Vegan Cauliflower Burgers (Keto, Gluten Free Options)

When I went to the grocery store for supplies to make these burgers, I’d been hoping to find sesame seed buns, not as much for the taste as for the photos; the camera loves texture.

The only buns with sesame seeds on the shelf were about four times the price, with a mile-long list of other ingredients and preservatives, so I bought plain whole-wheat buns instead, took them home, brushed a tiny amount of maple syrup on the tops, and sprinkled on my own sesame seeds.

Cauliflower Burgers

These cauliflower burgers are thick, juicy, healthy, and totally vegan!

Ingredients

  • 8 cups cauliflower florets (about 1 large)
  • 1 tbsp baking powder
  • 2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 2/3 cup flour (spelt, white, oat, gf ap, etc. Readers say almond flour also works)
  • 1 tsp salt
  • 1/4 cup + 2 tbsp water

Instructions 

  • Steam cauliflower florets until fall-apart soft. Drain fully. Once cauliflower cools, place in a clean dish towel or cheesecloth over a sink or bowl, and squeeze as much water out as you possibly can. You want it super dry. Place the squeezed-out cauliflower in a bowl. Whisk all remaining ingredients in a separate bowl, then add to the cauliflower and mash very well. Shape into burgers with your hands. You can either fry the patties in a little oil over medium heat (flipping halfway through), or preheat the oven to 400 F and bake 10 minutes on a parchment-lined baking sheet, then flip and cook 10 more minutes or until lightly browned and crispy.

    Those burgers look great! I look forward to trying them. Do you think sorghum flour or buckwheat flour would work? I have both of those to use up. Please do consider linking your Panda Express orange cauliflower. It is so good! I make it quite often. More of your readers need to know about it!

      Sorghum flour works! I don’t see why buckwheat wouldn’t, but we haven’t tried. I wholly agree with you about the orange cauliflower. Katie definitely wants to take some better photos for that recipe and do the recipe better justice. Hopefully soon!

    I totally wouldn’t mind inventing a recipe that incorporates chocolate and mushrooms together–let alone, CBD-infused chocolate mushrooms, haha! In all seriousness, this sounds like such a fabulous recipe over here. Cauliflower is such a fantastic superfood that you can use for anything, including sweet treats! I bet these burgers were such a winner!

    I’m making this today! I adore YOUR recipes! My husband is convinced I LIVE off of black beans….bahaha! No just black bean brownies hehehe!     I’m gonna try this tonight and put a block of tofu in it also to boost protein. I’m also gonna season it with some buffalo hot sauce… I’m hoping it turns out good. Fingers are crossed.

    I made these for dinner and they were really good! We aren’t Vegan or Vegetarian so we did add bacon to it as well as some honey mustard aioli sauce we bought and it was amazing!

    How many burgers does the recipe as written, make?

    Also, do you think these could work with some tuna inside too?
    Maybe some of the water could be replaced with some mayo… and add a little nutritional yeast… Mmm! My mouth is watering, lol!
