Single serving chocolate baked oatmeal
Today’s recipe is a single chocolate version of my Baked Oatmeal Recipe.
You can choose to blend the oats before baking so the results turn into an oatmeal mug cake. Or skip the blending step if you are in a rush or would prefer some texture to your baked oats.
I baked mine in a one cup ramekin, because I wanted to ensure the middle would stay undercooked and gooey.
If you want the oat cake to be cooked evenly instead, use a wide and shallow baking dish, such as a 7×5 pan, instead of a ramekin.

Recipe variations
Chocolate Lava Baked Oats: You have two options for the lava filling.
Either add up to three tablespoons of your favorite seed or nut butter (such as chocolate almond butter), or add a few squares of your favorite chocolate bar.
Protein Baked Oats: Feel free to substitute some or all of the cocoa powder in the recipe with chocolate protein powder.
Including the optional peanut butter or almond butter also ups the protein.
Chocolate Coffee Baked Oatmeal: Stir half a teaspoon of instant coffee into the batter before baking.
Or replace two tablespoons of the milk of choice with brewed espresso.
More Flavor Ideas: Add a fourth teaspoon of cinnamon or pure vanilla extract, a handful of shredded coconut or some mini chocolate chips, or stir in a few drops of pure peppermint or coconut or almond extract.

Chocolate Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp cocoa powder
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/2 cup milk of choice
- 1/4 cup yogurt or mashed banana or sweet potato puree
- 2 tbsp sweetener of choice
- optional lava filling (see above)
Instructions
- *I like the gooey center, but if you want it cooked evenly instead, use a wide and shallow baking dish (such as a 7×5) instead of a ramekin.If using an oven, preheat to 350 F. Stir all ingredients, blend if you wish, and pour 2/3 of the mixture into an oven-safe dish. Add the filling if using, then top with remaining mixture. (Watch the step-by-step recipe video above.) Hi sorry we haven’t yet!
I did not blend, but I did weigh my old fashioned oats and used 1/2 cup oat milk and 1/4 cup plain Greek yogurt. I did microwave for over two minutes but all it did was boil over.
I just ended up with oatmeal soup lol. Flavor was good and once it cooled a bit it was almost like a reg bowl of oatmeal.
Next time I’ll try baking it and maybe blend a little.
Hi! If you don’t blend or bake, then yes it’s just going to taste like chocolate oatmeal because it IS chocolate oatmeal ;).
I also tried to microwave and it boiled over and didn’t cook. So next time I’m going to bake.

When you say “sweetener of choice,” does that include wet AND dry? Does one come out better than the other?

What about cacao vs cocoa powder? I only have cacao but I think it’s super strong and bittrt. Do you just up the sweetener or decrease the cacao?
Very good! Do i need to add the calories for the milk and yoghurt to the calories listed?
If i double the recipe to make two batches, should I also double the cooking time? 50 minutes seems like way too long to cook but I also want it to cook inside

Hmm, not bad…but when you could have your warm brownie, & bowl of (cinnamon-raisin-cream-pecan-coconut 😉 oatmeal separately, I would prefer eating my chocolate & oats that way.
In the video, it looks like applesauce was used instead of the banana. Was it?
I can’t stand the texture of regular oatmeal so thought I’d try this recipe. I have literally eaten it every single day since I first made it last week. I love that theirs no egg, oil, or banana. Topped with some sugar free choco chips and it is heaven.
