For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Brownie Batter Pancakes

These secretly vegan and healthy brownie batter pancakes taste like eating dessert for breakfast!

Yield: 6 – 8 silver dollar pancakes

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions 

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
    *I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

    I had to wait until the weekend to make these since I’m still in high school, but oh my GOSH Katie! Just made these for breakfast, and they were fantastic! Mine were quite flat, but we a little spread raspberry jam on each, squirted whipped cream down the middle, rolled them up like cannolis and sprinkled on powdered sugar! Yum! I’ll have to go find your thick pancakes trick… sure they’ll be delish like that too 🙂
    My mom loved these too! We are both serious chocoholics but she was kind of skeptical about this recipe. Her mind is totally changed now, and I’ll be making many of your recipes in the future, starting with chocolate chip cookie dough dip later today. Thanks for the recipe!

    Oh yum I just made these are they were great! I planned on using maple syrup so I used a little less sugar and they were still good enough to eat right out of the griddle. Fluffy, chewy and a nice chocolate flavor. I’m definitely using chocolate chips next time because I can never have too much chocolate!

    I just made these for myself and kids today and we are in love with them! I made them as written, using spelt flour, sugar, the oil and applesauce suggestion. I wasn’t sure about the batter at first, since it was really runny, and it makes a very thin pancake, but once I used enough spray/butter on the griddle, they were not too difficult to flip with some finesse. Just so ridiculously easy to make! I tripled the recipe, I probably need to at least quadruple it next time…..five kids and myself, sometimes hubby, thats a lot of pancakes!

    Is it 130 calories if you use unsweetened apple sauce?? Because if you use oil it is definitely more than 130 calories because the flour alone would be one hundred calories…just wondering. Thanks for posting such awesome recipes!

    Just made these for the second time. It’s definitely my favorite recipe (although I did eat almost an entire pan of flourless chocolate chip cookies the other day). I made a quadruple batch of the pancakes so I could freeze some. I started out adding banana and then ran out so I decided to try adding some mini marshmallows. OH MY GOODNESS! If only I had some graham cracker crumbs. It was sooo delicious! Love your blog!

      You could use regular vegetable oil or canola oil in place of the coconut oil :).

    These are awesome! I am on a low calorie diet and these are perfect for breakfast. Instead of the chocolate sauce I added a little bit of light whipped cream. The perfect “reward” after a 10k run! 😀

    Hey Katie!
    I’m making my dad ‘brinner’ for Father’s Day tomorrow and I’m debating between these pancakes and one of my favorite vegan waffle recipes, which got me thinking…you have so many fabulous pancake recipes, how easily do you think they could be converted to waffles?! Seems like you must be more partial to pancakes but my dad and I are serious waffle lovers; I think I may just add a little more baking powder and maybe a little more oil and cross my fingers and give these a try as waffles tomorrow!     I’ve made these several times now and they’ve been great every time! So quick and easy, too–that is a must for me in the mornings. I sprinkled them with powdered sugar, and my (German) boyfriend topped them with applesauce, and we were both very satisfied! I like how they’re not super sweet; it’s hard for me to handle too much sweetness early in the day. I know I’ll keep coming back to this recipe again and again. What a wonderful vegan pancake.
