The delicious homemade chocolate pancakes are magically made without any eggs at all and can be completely dairy free and vegan.

For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Brownie Batter Pancakes

These secretly vegan and healthy brownie batter pancakes taste like eating dessert for breakfast!

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions 

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
    *I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

    Katie, I would love to see the full nutritional content for those of us following Weight Watchers. I didn’t see a fat or carb content and we can’t calculate Points without knowing fat, fiber, protein and carbs. Thanks in advance! These look fantastic!! Love your site!

    Omg. Just made these this morning..

    they’re AMAZING. i slightly undercooked mine, so they were chewier than intended. that doesn’t matter, it tasted like a dark chocolate brownie!! I topped it with your amazing banana butter, and mmm! Yum! I will DEFINITELY be making these again.

    Made these just now. Used whole wheat flour and added a tsp of instant espresso and mmmmmmm yummy. Definitely needed a bit of syrup to balance out the chocolate. Great healthy recipe

    Silver-dollar pancakes. How do you measure those out? I used a tablespoon measure when I made them this morning, but they seemed kind of big…I’m wondering though if I did something a little off because the batter seemed thin. They tasted amazing, but didn’t look like yours.

    Made these today and they really hit the spot! I used spelt flour and followed recipe exactly (except with extra stevia as I have a serious sweet tooth!), but mine fell apart and wouldn’t flip without sticking/making a mess. They tasted just like gooey brownie batter and were awesome, but yours looked much prettier than mine! I even greased the skillet. Any thoughts? Maybe your new oreo pancakes would work out better for me? Side note: Have you ever made pancakes in the oven? I’ve heard that it works, but never tried it!

      your pancake isnt done before you are flipping it.

      afew important notes on making pancakes:

      grease skillet- always

      let pan come back to heat before adding batter

      do not flip until the bubbles stop forming on the uncooked side. if it is still bubbling, then it isnt cooked solid enough to flip. (if you find that waiting this long scorches the underside, your heat is too high)

      after flipping, smacking the center to make a slit. this steam vent ensures that moisture can escape, thereby allowing your pancakes to cook through

      Letting your pancake batter rest for about 5-10 minutes before cooking them will make them more stable and easier to cook. It let’s the baking powder do it’s magic!
