For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
*I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

So I’ve had a few problems with this chocolate pancake recipe…first of all, the batter is not substantial enough to hold up chocolate chips or any fruit. Is there a reason that it’s so thin? And secondly do you spray any oil or rub your pan/ griddle with anything prior to pouring? I’m having trouble with these sticking a lot…

    1. Celine says:

Ok never mind about the sticking! Sprayed the next batch with oil and turned the heat down a little and they came out perfect.

  2. Joseph says:

If you want a “more substantial” breakfast you can always add fiber powder and/or whey protein to the mix. The fiber will give you a fuller feeling and takes more calories to digest. As well as the whey protein. – mind that both with add calories to the recipe

  3. Traci says:

I just made these tonight for dessert. All I can say is “WOW!” guilt free chocolate pancakes! They have me doing the chocolate happy dance. 🙂

  4. Sara says:

These are absolutely amazing!! They are SO chocolatey, I kept thinking, there is NO way these are low in calories! I didn’t get as many pancakes as the picture shown from the batter, but who cares? It was AMAZING!

Like everyone says, you are a genius! Thank you so much!!

  5. Aimee B. says:

Just tested these out because I want to make them for my Sweetie’s birthday on Friday. My kids and I LOVE them! I drizzled them with melted chocolate chips. These are so decadent and delicious! I know my hubby will be in Heaven when he tastes them. Thank you, Katie! <3

Whole wheat pastry flour works too. I just tried it!

Hi Katie! I am new to your blog… and I am already in love! Even if I don’t make the recipes, I just love scrolling through the pictures! I was wondering, in Ireland we don’t have readily available apple sauce so would you please post a recipe, if you haven’t already? Much appreciated, Emma x

    1. will c says:

take some apples and apple juice. core and peel the apples, then cut into chunks. place in a pot with the juice and cover. (low, med-low heat) simmer, stirring occasionally. as time goes, the chunks will soften. you will need to add more juice now and then to prevent goop from cooking to bottom of pot.

when to take your applesauce off the heat depends on how chunky you like it….

  8. Christina Holmes says:

I made these tonight and used the whole batch to make a waffle instead of little pancakes. I have a round belgin style waffle maker. The first one was a little too soft and fell apart when I took it out so I added about a tablespoon maybe two of extra flour. I used whole wheat flour. The second one was great. It was still soft and fluffy so I had to remove it carefully from the waffle maker. I also needed to cook it about a minute longer than my waffle maker wanted. It is one of those that lights up when it is done. My three year old devoured it in about five minutes then asked for another. I had mine with strawberry syrup made with about a cup of frozen berries, four tablespoons water, and two tablespoons maple syrup boiled then reduced until thick. So amzing! An awesome breakfast for dinner. These will definitely be a regular!

  9. lacey says:

i can’t figure out how these only have 120 calories in the whole recipe?? the flour has 120 calories and 1 T of oil has 120 too, I used a bit less sugar than the recipe called for but all together it’s over 300 calories. Did I miss something?

    1. becauseHeloves! says:

I don’t think the calculations figure in the oil

  10. Shannon says:

I just made these and they were delicious! I used regular cocoa powder but added chocolate chips to make up for it. I also spread homemade freezer jam on top and they were perfect!

  11. Donna Anderson says:

These sound like they’d be way too much chocolate, but really – can you ever have too much chocolate? I’m going to try these the next time my grandsons spend the night with me. They’ll love it!

    1. McKenna says:

In response to your first question, no, I don’t think you can! ; )

  12. lisa says:

I made these with 1 packet Nectressa (made from Monk fruit), 1/4 tsp sugar, Hershey’s Unsweetened Cocoa Powder, and used oil. Then followed then recipe from there. 🙂 I try to watch my calories, so this was the perfect recipe fix! 😀 I topped mine with Sugar Free Maple Syrup, and a teaspoon of Honey, and a little Sugar Free Boysenberry Jam.
They were DIVINE! Thank you SO much, CCK!! <3 🙂

  13. Paula says:

Okay, so I have to make these tomorrow morning…but–what is the chocolate sauce you are drizzling on them?! Oh. My. God. I am salivating… Maybe I could melt baking chocolate with some maple syrup and have my sauce that way 😉

    1. Chocolate Covered Katie says:

      Probably Barleans chocolate raspberry sauce.

  14. will c says:

while i appreciate that you included a mention of bob’s gluten free flour, it is also very important to note that gluten free flour products lack the proteins to bind the finished product together. accommodations must be made in a recipe to hold your gf pancake together, or they will crumble, at best…

the easiest way to do this is to use 1 1/4tsp xanthan gum per cup of flour, however guar gum our and extra egg may be used as well

  15. Kayla Marie says:

I made these this morning with my boyfriend and they are so delicious! Top with maple syrup, bananas, peanut butter, anything! They are so yummy and simple, I will definitely make them again 🙂 Thanks Katie!

  16. Kyra says:

OMG these were the bomb! I substitute chocalate syrup for coconut nectar instead!

    1. Kyra says:

Ummm whoops. I meant I used coconut nectar instead of chocolate syrup. Anyway, these were freaking amazing and I’m gonna make this over and over again. This recipe yielded 3 small pancakes!
