For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.
We’ve had movie nights, spa nights, and every night is chocolate night.

On the menu last night: Healthy Chocolate Chip Cookies.
Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.


Brownie Batter Pancakes
Ingredients
- 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
- 1 tbsp dutch cocoa powder
- 1 1/2 tbsp sweetener of choice
- 1/4 tsp baking powder
- 1/16 tsp salt
- 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
- 1 tsp pure vanilla extract
- 4 – 5 tbsp milk of choice
Instructions
- Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.*I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that. View Nutrition Facts

delicious! i used all-purpose flour, brown sugar, regular Hershey’s cocoa & coconut oil… oh, and semi-sweet chocolate chips! very chocolatey & yummy!! perfect serving for one person.

Made those for breakfast: instead of the oil , i put a third of a pear. It felt like melted chocolate chips !! DELICIOUS! topped with a very light spread of tahini…. oooo my word! what ..?? did i already finish the plate..??? i swear all those pancakes were here a minute ago….!! o well, i’ll just have to make some more ..:D
Mmmmmm. I’m so glad I saw this on Pinterest. I was craving chocolate, so I made these for dessert tonight–added some flax seed meal and some blueberries and they are heavenly!

I made these with some added chocolate chips… totally decadent for breakfast!!!!
But, I was doing the math and curious how it comes out so low? Just 1/4 cup of AP flour is 113.
I just had these and I swallowed them whole. They were so good that I was eating them while waiting for the next pancake to come off the pan!! It seems as if they evaporated.

I just found this recipe last week and have already made it twice. The second time around, I made it with 1/2 T oil and 1 T mashed banana (rather than applesauce) and just about 1/2 T sugar. I think I may leave the sugar out entirely next time (because there WILL be a next time!). I made it into 3 pancakes and stacked them up with layers of PB and banana slices between the pancakes. Can I used coconut flour instead?
Love this recipe! My brother’s a big junk food junkie, so when I promised him chocolate pancakes, he was all over that idea! Little did he know they were healthy AND vegan until five minutes later when they were gone…mwahaha! I also tried some myself and thought “there’s no way these can be healthy.” But I trust you! 🙂 Also, I made them with regular baking cocoa and they were excellent!
