For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
*I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

Yuuuuummy! I’m eating these right now 😀 I didn’t have any applesauce so I just added a teensy bit more milk. I also omitted the sugar. I made 5 little pancakes and topped them with Dark Chocolate Dreams PB. 😛

    1. Chocolate-Covered Katie says:

Oh my wow! I am amazed that you already made them! You are a superstar, girl!

  2. Anna @ Food Fitness Frolicking says:

Sleepovers were awesome when I was a kid! Can you say As Told By Ginger, popcorn, and enough chocolate to make you sick? 🙂

    1. Chocolate-Covered Katie says:

Ugh I had a friend who burned popcorn at 3am at one of my sleepovers. 😕

  3. Charlie says:

I woke up late today, and since I knew this is what you would be posting, I made sure to check your blog before having breakfast. These were REALLY good and very brownie like! I didn’t use any of the added sugar/stevia, the sweetness from the applesauce was enough for me (though if I had made them this way for my best friend she probably would have spit them out lol). yummehhh great recipe!!!!

    1. Chocolate-Covered Katie says:

Wow, I am amazed that you already made them! Two people have already made them??? Y’all are crazy-awesome!

  4. Jamie aka "Sometimes Healthy" Girl says:

I’d eat both the spinach choco pancakes and the brownie batter pancakes…at once. They both look too yummy!

As for sleepovers, I still have them with my bff in NYC every now and then. Sometimes we go so long without seeing each other that it’s nice to reconnect and watch girlie movies and gossip 🙂

  5. Amber K says:

It’s funny because cookie dough is way better than cookies, but I actually prefer brownies to brownie batter. I LOVE dense, chewy brownies.

But these look delicious! I (not so) secretly wish you had snuck some green powder into your friend’s pancakes, just because I’m curious if she would have been able to tell!

  6. Kristen @ Chocolate Covered Kristen says:

You are putting my breakfast to shame. WOW!

  7. Aja says:

Oh my goodness. If I have a sleepover again we’re having these for breakfast. Maybe dinner, too.
I always slept at sleepovers. I’m terrible at staying up all night. On New Year’s Eve I was sleepy by 9 and somehow pushed through to midnight but crashed almost immediately after.

  8. Alyssa says:

That photo should be on the cover of a magazine. No, scratch that, on the cover of every major newspaper, and on billboards across the world!

    1. Sarahishealthy says:

Plus one to this! I’m making it my screensaver 🙂 🙂 🙂 :).

  9. Mellie says:

Brownie batter is DEFINITELY better than brownies! And the best part of the sleeepover is definitely at 2 or 3 am when everyone’s deliriously hyper!

  10. Sarahishealthy says:

Couldn’t you have posted these a few hours earlier? I am seriously regretting my choice of breakfasts!

  11. Gloria says:

    Oh my…I’m making those asap!!!

  12. Bianca- Vegan Crunk says:

I would eat licorice for breakfast for a hundred bucks, and I HATE licorice. But I don’t hate spinach, so I would have definitely taken you up on that offer.

  13. Kris (everyday oats) says:

I’m going to need to make these for breakfast tomorrow 😉
Ah, the thought of middle school sleepovers brings back so many fun memories. And some interesting ones like ‘light as a feather, stiff as a board’. Its funny how we actually thought it would work…

    1. Chocolate-Covered Katie says:

It never did… and yet we kept playing it anyway!

  14. Charissa says:

Yah. I’ll be making this. End of story.

  15. Maryea @Happy Healthy Mama says:

Wow I am blown away by how amazing these look!!
