For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Brownie Batter Pancakes

These secretly vegan and healthy brownie batter pancakes taste like eating dessert for breakfast!

Yield: 6 – 8 silver dollar pancakes

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions 

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
    *I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

    I discovered this recipe three days ago and I’ve had it for breakfast every day. They are amazing! The only sad thing is that I don’t have any stevia in the house (I really want to try it–I’d love to make sweet stuff without all the calories) so I used white sugar. I also love buttermilk pancakes so I used buttermilk in these. I figured those were pretty significant ingredient swaps, so I ran the new recipe through MyFitnessPal’s recipe calculator and got a really sad surprise. Wheat flour, sugar, and coconut oil drove the calories up into the 500s per batch. 🙁 So these are absolutely amazing, but if you want the low-cal version, you definitely need to stick with Katie’s original ingredients. Thanks Katie for so many incredible recipes!

    Update: I’m not sure how you got 130 calories per batch, Katie. I put your original recipe (spelt flour, stevia, coconut oil, etc) through a calorie calculator and got about 330 calories per batch. I know every calorie calculator is going to give slightly different results, but a 200 calorie difference is pretty significant. You may want to double check yours so people aren’t misled. 300 calories for these pancakes is definitely worth it, but it’s still good to have accurate info. Thanks!

    Katie, I love your chocolate recipes. They definitely are proof that healthy chocolate desserts can taste amazing. I’ve made these double chocolate brownie batter pancakes so many times…I just had them this morning and because I only had regular cocoa powder at the moment, I added in a good handful of semi-sweet chocolate chips which definitely made it taste like DOUBLE CHOCOLATE brownie batter. To make it even more amazing I topped it with a good dollop of your banana butter recipe. Thank you for helping me incorporate chocolate recipes into my vegan lifestyle!
