The delicious homemade chocolate pancakes are magically made without any eggs at all and can be completely dairy free and vegan.

For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.

We’ve had movie nights, spa nights, and every night is chocolate night.

Brownie Batter Pancakes

On the menu last night: Healthy Chocolate Chip Cookies.

Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Brownie Batter Pancakes

These secretly vegan and healthy brownie batter pancakes taste like eating dessert for breakfast!

Yield: 6 – 8 silver dollar pancakes

Ingredients

  • 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
  • 1 tbsp dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
  • 1 tsp pure vanilla extract
  • 4 – 5 tbsp milk of choice

Instructions 

  • Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.
    *I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that.

    Yummm, these were so delish! I used some peanut flour too which added a nice p-nutty taste 🙂 no toppings needed which was great since they were eaten on the go! Thanks Katie! 🙂

      I don’t think I’ve actually used regular ww flour (as opposed to pastry) in years! I can tell you that it will be fine, texture-wise. But I can’t personally vouch for the taste. If you try it, let me know whatcha think! 🙂

      I used white whole wheat, too. Once with regular cocoa and once with dark. Both turned out great. We just ate them as a snack with no syrup. The dark cocoa smells more like brownies baking, but I really didn’t notice a huge difference in taste. Maybe I have an unsophisticated cocoa palate.

    Oh man, I know what I’m having for dinner tomorrow!

    We definitely had sleepovers. When we were younger, it almost always involved constructing a fort out of sheets and chairs and things. When we got older, it was all about staying up as late as we could watching terrible movies and talking.

      So I am eating your pancakes now, and I am seriously without words. The batter almost didn’t make it into pancakes because it seriously tastes JUST like brownie batter (only BETTER!!). And now I feel like I’m eating brownies for lunch. I added chocolate chips and topped them with peanut butter and coconut butter, and I am purely in heaven. I don’t think I have EVER tasted a better pancakes (although it’s close between these and your strawberry shortcake pancakes 🙂 ). So anyway, thank you SO MUCH for the beyond incredible pancakes!!     Oh man I’m bummed I didn’t read your blog before I ate breakfast. I’m definitely going to be making these tommorow! Your pictures are so pretty. Haha, and one time i tried putting chocolate syrup on pancakes but I actually didn’t like it; it just got sticky and wasn’t as runny as maple syrup. What website do you use to calculate your calories?

      I don’t use a website. I use good ole math ;). Especially for single-serving recipes like this, it’s really easy because all you do is add the individual #s up.

        I am going to wager a guess and say you used stevia and applesauce in your calorie calculations? So if we use sugar and oil, it will be about double that right? Does spelt flour have fewer calories than regular wheat flour?

    Those pancakes look amazing! I made your Snickerdoodle dip this weekend and my kids loved it. So much that my 15 year old then made your Chocolate Brownie Batter Dip. Another big hit. We had friends over Sat. night and I brought out the dips and everyone loved it. Nobody could believe it when I told them it was made with chickpeas and Great Northern Beans (that is all I had when my daughter went to make the Chocolate dip – they worked great!)

      I offered maple syrup, banana butter, or agave, or even coconut butter… but when she tasted them, she said they didn’t need topping, and she ate them plain!

    I had sleepovers all the time when I was a kid. My daughter has started asking to have one, but she’s only 5 and all I can imagine is me calling moms at 2am when the kids won’t go to sleep!

    Holy chocolate! lol. These look so decadent! I always loved sleepovers. We always stayed up late watching Disney movies when younger which eventually turned into late night games about crushes, Truth or Dare, and gossiping. I was always pretty crabby the day after from lack of sleep!
