For the past few days, one of my friends has been staying with me while she waits to move into a new apartment, so basically, it’s been an ongoing slumber party.
We’ve had movie nights, spa nights, and every night is chocolate night.

On the menu last night: Healthy Chocolate Chip Cookies.
Yet both of us woke up craving chocolate again this morning, and the only way to remedy this was to make a chocolate pancake feast.

Brownie Batter Pancakes
Ingredients
- 1/4 cup spelt, white, or oat flour (for flourless, try these Keto Pancakes)
- 1 tbsp dutch cocoa powder
- 1 1/2 tbsp sweetener of choice
- 1/4 tsp baking powder
- 1/16 tsp salt
- 1 1/2 tbsp oil, or applesauce or mashed banana for fat free
- 1 tsp pure vanilla extract
- 4 – 5 tbsp milk of choice
Instructions
- Stir dry ingredients well, then add wet. Add more milk of choice as needed to form a batter consistency. Grease a nonstick pan well and heat on medium. When skillet is hot (add a drop of water to test – the pan is ready if it sizzles), drop small ladles of the batter. Use a spatula to flip when edges begin to look dry. Re-grease the pan after each set of pancakes.*I personally much prefer the oil version but some readers really like the fat-free one so I'm including that too. I haven't tried subbing regular cocoa powder for the dutch, so be sure to report back if you experiment with that. View Nutrition Facts

Just made these! GAH they are so good!!!! I felt like I was eating brownies, and kept having to pinch myself and remind myself that they were pancakes!
Thanks for making healthy eating FUN! 🙂
Sleepovers for me now that I am older usually consist of telling about our lives now that we have all moved away to college/work. We barely see each other and have sleepovers to overindulge in food and gossip! 🙂
Just ate these for breakfast. ZOMG they were good! Even better than I’d imagined. My 7 year old who HATES healthy food scarfed them down in record time! Thank you so much for this recipe!!! 🙂
The Girl Scout Samoas sound good. I’m going to try to make them TODAY! I’m so glad I found your site. Thank you!!
Hi Katie! Thank you so much for your blog and your dedication to it and all of your fans!!
Where can I find Amazing Grass Chocolate Green SuperFood? I’ve looked for it a Whole Foods but I can’t find it anywhere! Maybe I am just looking in the wrong place?
I (and my very carnivorous boyfriend) LOVE your recipes!! Thank you so much!!
Hey Katie, I didn’t know where to ask this, but I have a completely random question: Have you ever tried Shirataki noodles before? I was wondering if you had an opinion of them. Thanks!
I tried them once, out of curiosity, a few years ago. I thought they were slimy and weird! But I am an absolute LOVER of real pasta, so I am probably biased ;).
Oh.my.lawd, Katie! These look beyond amazing! And I am in love with the chocolate drizzle action in the photos…and I’m not even a huge chocolate fan (I know, *gasp*)
4:25 saw the picture of Food Gawker
4:35 made pancake batter
4:40 jumped around anxiously for pancakes to cook
4:42-4:43 stuffed pancakes in my mouth
4:44 completely blissed out with chocolate
4:45 sat down to write how insanely good these are…. and how I’m thankful I only got 3 3-inch pancakes so will not be forced to replace dinner with pancakes!
Thank you so much for posting!!! Perfect quick chocolate fix!!!
LOL! I especially like the part at 4:44
I think this is the cutest comment ever 🙂
Do you think this will work with coconut flour? I have a whole bag just begging to be used for something!
I don’t know if you can use part coconut flour, but you can try. You definitely shouldn’t try with ALL coconut four, though, because it’s too crumbly of a flour and will fall apart.
Oh man, I am making this tommorow. I’m bummed that I don’t have dutch processed though because I’ve tried your other chocolate batter pancakes (from a long time ago) but it didn’t taste super chocolatey without the dutch processed. I’m trying it again though and throwing in some chocolate chips and topping with peanut butter or coconut butter.
I would love the Samoas babies! I’ve already subscribed by email, and liked you on Facebook!
Can I omit the applesauce? Because I don’t have any…
You can sub an equal amount banana… or probably even nondairy yogurt! Or oil.
i just made them and used pumpkin, actually… it worked!
These were sooooooooooooooooooooooooooooooooooooooooooooooooooo good!!!!!!!!! Even my husband loved them, and he does NOT eat healthy food so that’s saying something! 🙂
Katie, these were AWESOME! Actually “awesome” doesn’t even begin to cut it. These were BETTER than awesome. I know what I’m having for breakfast tomorrow and the next day and the next day and the next day……….. YUM!!!
Made these for breakfast this morning….DELICIOUS! I quadrupled the batch to make a bunch for my family. I also added my own twist: cinnamon. I would have loved to add some cayenne pepper too but my son doesn’t like spicy chocolate (but I sure do!!). I have a Mayan brownie recipe that I use cinnamon and cayenne for and they are AWESOME. The cinnamon was a nice addition to the pancakes but maybe not everyone cares for spicy when they wake up in the morning…
Anyways. AWESOME! Thanks!
Oh wow, I LOVE your idea to add cinnamon! And I love your cayenne idea even more! I might have to try this too! 🙂
I used ovaltine in lieu of cocoa powder and o. m. f. g. I just had an experience. I’ve been craving chocolate like mad and to finally get it, in such a healthy form… I’m so happy <3
(I also added some chocolate chips, though!)
my favorite recipe yet!
Ooh I’ve never had Ovaltine before… I remember I used to think the commercials were funny, but I never actually tried it!
