Instructions
- If almond butter is not soft, gently heat until stir-able. Line an 8×8 pan with wax or parchment paper. Crush the granola before measuring 1 cup. Mix the crushed granola with 1/4 cup of the almond butter, 1 tbsp of the maple syrup, and the optional mini chips. Spread into the pan. Press down firmly using a second sheet of parchment. Combine all remaining ingredients until smooth–it's easiest in a food processor but can also be done by hand. Spread over the crust. Freeze to set. Cut into bars or squares. Store leftover bars in the freezer.View Nutrition Facts

I made these with chocolate almond butter and chocolate peppermint granola for a holiday twist and they were fantastic!
As others mentioned, I didn’t want to buy three packs of the suggested granola without knowing what it tasted like beforehand, so I made these with bear naked granola and they turned out great!
I will keep an eye out for the granola brand you mentioned for a future trial because I will 100% be making these again, just probably in the summer since they remind me of ice cream bars, not ideal for the current weather here?
Hi Katie,
I realize this may be a dumb question, but have you considered a sweet potato chocolate pudding or mouse? The sweet potato base of this recipe seems like it could maybe be a pudding or mouse if it were left in a bowl. Before I try it, I wondered what your thoughts may be or if there is a similar recipe on your blog for a sweet potato pudding or mouse that I haven’t yet discovered? Thank you!
Lauren
