Superfood Chocolate Fudge Bars

- 1 cup mashed banana or roasted sweet potato
- 1/4 cup cocoa powder or raw cacao powder
- 1/2 cup almond butter or allergy friendly sub
- 3 tbsp pure maple syrup or honey or agave
- 1/8 tsp salt
- 1 cup crushed granola
- optional 1/2 cup mini chocolate chips
If almond butter is not soft, gently heat until stir-able. Line an 8x8 pan with wax or parchment paper. Crush the granola before measuring 1 cup. Mix the crushed granola with 1/4 cup of the almond butter, 1 tbsp of the maple syrup, and the optional mini chips. Spread into the pan. Press down firmly using a second sheet of parchment. Combine all remaining ingredients until smooth--it's easiest in a food processor but can also be done by hand. Spread over the crust. Freeze to set. Cut into bars or squares.
