Key ingredients

My first introduction to this 2 ingredient healthy chocolate mousse came last year at a holiday party. A friend brought the fluffy chocolate dessert to share, and I was shocked when she mentioned it was completely dairy free and vegan.

I was even more shocked when she told me the ingredients!

Chocolate – The recipe calls for dark or unsweetened chocolate, which is high in antioxidants and magnesium. For the best results, I recommend buying high quality chocolate baking bars, such as Ghirardelli, Baker’s, or Guittard.

Use 70% bittersweet chocolate if you prefer a sweeter mousse or up to 100% cacao for a sugar free option with more intense chocolate flavor.

Apples – Choose a sweet or slightly tart variety of apple. Good choices include Gala, Honeycrisp, Fuji, or Pink Lady apples. Look for fruit that is ripe and not bruised.

Optional salt – For flavor depth, I like to add a pinch of salt. This is entirely your choice.

That’s it! Unlike other healthy chocolate mousse recipes, this one calls for no avocado, tofu, banana, dates, gelatin, chia seeds, cottage cheese, coconut milk, or Greek yogurt.

How to make healthy chocolate mousse

  1. Start by peeling your apples and chopping them into even, medium size cubes. Discard the skins, seeds, and cores.
  2. Place chopped fruit in a small saucepan, along with about a fourth cup of water. Cover and bring the pot to a boil over medium heat.
  3. Once boiling, reduce heat to low and continue to steam until soft and tender, about twenty minutes.
  4. Fully drain off all the water and set the apples aside.
  5. Finely chop the chocolate bars. Carefully melt in the microwave or in a double boiler on the stove top until smooth.
  6. Blend the apples, optional pinch of salt, and melted chocolate sauce in a blender or food processor, or with an immersion blender in a large bowl. The mixture will seem thick and chunky at first, so continue to blend until completely smooth.
  7. Pour into individual serving cups or fancy glasses. Garnish with fresh berries, mint leaves, whipped cream, or shaved chocolate.
  8. Cover leftovers and store in the refrigerator for up to five days. For optimal texture, freezing this dessert is not recommended.

Turning this creamy mousse into a decadent chocolate cake with a fudge like texture is super simple.

After blending the apples and chocolate, spread the mix into a small container or a springform pan.

Chill in the refrigerator until set, then slice and enjoy!

Tips for the best healthy chocolate mousse

  • Use good quality chocolate bars to achieve a fluffy dessert. Do not try to substitute chocolate chips or candy melts, because they contain added stabilizers and other ingredients that may yield a grainy or gritty texture.
  • Stay away from Red Delicious apples (too mushy) or Granny Smith apples (too tart).
  • Be sure to fully drain off all the water after boiling the fruit. This step prevents the chocolate from seizing.
  • Top each serving with high protein Greek yogurt or Coconut Whipped Cream.

Ingredients

  • 8 oz dark or unsweetened chocolate bars (70% to 100% cacao) (226g)
  • 4 medium apples (Or try this Keto Chocolate Mousse)
  • 1/16 tsp salt (optional)

Instructions 

  • 1. To make the healthy chocolate mousse, first peel apples and slice into medium size cubes, discarding the seeds, skins, and cores.
  • 2. Place fruit in a small saucepan with 1/4 cup of water. Cover and bring to a boil over medium heat.
  • 3. As soon as it starts to boil, reduce the heat to low and continue to steam about 20 minutes, until apples are soft and tender.
  • 4. Drain fully, then set the cooked apples aside.
  • 5. Chop chocolate bars finely. Carefully melt in the microwave or in a double boiler on the stove top.
  • 6. Blend the apples, optional salt, and chocolate sauce together with a blender, food processor, or immersion blender until completely smooth.
  • 7. Pour into cups or small glasses, and garnish with fresh berries, sliced banana, whip cream, or dark chocolate shavings.
  • 8. Store leftovers covered in the refrigerator for up to five days.

      We have not tried it so can’t say how it would turn out. But the fat content (and thus the richness) will be less if using cocoa.

    I am interested in making this recipe as I have just bought some high flavanol cacao powder for my husband as I have read it is good for a condition he has. He is on a sugar free diet and loves apples so this recipe would be ideal. I am wondering if I can make this mousse with the cacao powder using 8 oz of it to match the weight of the bars.
