Combine all ingredients in a medium pot. You can add shredded coconut in the beginning or save it all for topping the coconut oatmeal later. Bring the mixture to a boil. Then cook on low-medium heat, stirring as needed to prevent sticking. Once thick, top as desired, and serve hot.
