Healthy Spinach Artichoke Dip

This healthy spinach artichoke dip recipe is extra cheesy, creamy, and delicious. Baked until bubbly and served hot from the oven, it is a huge crowd pleaser at parties!

Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach or kale (60g) (can be omitted)
  • 2/3 cup Parmesan cheese or nutritional yeast (60g)
  • 1/2 cup Greek yogurt or dairy free alternative (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  • 1. If baking the healthy spinach artichoke dip, preheat your oven to 350° Fahrenheit (177° Celsius).
  • 2. Drain artichoke hearts but do not rinse. Squeeze excess moisture from the frozen spinach, then roughly chop the artichokes and spinach.
  • 3. Add all ingredients to a heat safe bowl, and stir until well combined.
  • 4. Enjoy as a cold dish now. Or bake on the center rack of the oven for 20 minutes or until hot, bubbly, and lightly browned on top. Alternatively, microwave 5 minutes (stirring halfway through) or until evenly heated.
  • 5. Serve the healthy appetizer hot from the oven, alongside toasted baguette, tortilla chips, or an array of raw vegetables.
  • 6. Refrigerate leftovers in an airtight covered container for up to five days.
