Peach Baked Oatmeal

- 4 cups rolled oats
- 3 cups mashed banana (or see banana free version above)
- 1/3 cup nut butter or oil, or additional water
- 1/3 cup pure maple syrup or agave or honey
- 1 tsp salt
- 1/2 tsp cinnamon
- 1 tsp pure vanilla extract
- 2 eggs or a half cup of water
- 3 cups diced peaches
Preheat the oven to 350 F. Line a 9x13 inch pan or a similar sized pan with parchment paper. Or grease the bottom and sides of the pan well. Stir all ingredients except the peaches in a large bowl. Then stir in two cups of the peaches. Transfer into the pan, spread the remaining peaches on top, and bake for 40 minutes or until golden and bubbly. Serve hot, or let cool for easily sliceable oatmeal bars. Refrigerate leftovers for up to four days, or slice and freeze for up to about five months.View Nutrition Facts
