- 5 cups sliced strawberries (1 1/2 lb or 690g after slicing)
- 1/2 cup water
- 1/3 cup sugar or granulated sweetener of choice
- 1/4 tsp salt
- 4 tbsp cornstarch or 3 tbsp chia seeds
- 9 inch pie crust (see options above, including keto and vegan)
- optional additional strawberries for decoration
To make an easy strawberry pie, first prepare your crust, then set it aside. Wash and slice the berries, discarding the stems. Combine all filling ingredients in a medium pot. Stir very well, and bring to a boil. Once boiling, turn the heat down to low. Stir frequently until thick. Spread the strawberry filling into the prepared crust. Chill in the refrigerator a few hours or overnight to set. Decorate by arranging additional sliced strawberries on top if you wish. Slice, and enjoy.
