Vegan Irish Soda Bread

This soft vegan Irish soda bread recipe tastes just like my grandma's Irish soda bread, with no eggs or dairy!

Ingredients

  • 3 cups flour
  • 1 1/2 cups raisins or currants
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1 1/2 tsp salt
  • 1 tsp baking soda
  • 3/4 tsp caraway seeds
  • 1 cup nondairy milk of choice
  • 3/4 cup plant based yogurt
  • 1/3 cup applesauce
  • 2 tbsp oil

Instructions

  • To make vegan Irish soda bread, first preheat the oven to 350 F, and grease a 9 inch round pan well. Stir all dry ingredients in a large mixing bowl. Add liquid ingredients, and stir until just evenly combined. Do not overmix. Spread the batter into the prepared pan, smoothing the top with a spoon. Bake on the center rack of the oven for 40 minutes or until lightly brown.
